FREQUENTLY ASKED QUESTIONS

Should I use flour or corn tortillas?

  • Flour tortillas work best for this recipe because they’re soft, easy to roll, and hold up well with the sauce.
  • Corn tortillas may crack or fall apart, but you can use them if you prefer—just warm them up first to make them more pliable.

What kind of pizza sauce should I use?

  • Any store-bought or homemade pizza sauce will do! Use your favorite brand, or even marinara in a pinch. If you like a little spice, go for a zesty or spicy pizza sauce.

Can I make this ahead of time?

  • Yes! Assemble the enchiladas, cover tightly, and refrigerate for up to 24 hours before baking.
  • You may need to add a few extra minutes to the bake time if going straight from the fridge.

How do I store and reheat leftovers?

  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • Reheat in the oven or microwave until warmed through.
  • These also freeze well—just wrap them tightly and freeze for up to 2 months.

What toppings can I add inside?

  • The possibilities are endless! Try cooked sausage, diced bell peppers, mushrooms, olives, onions, or even jalapeños. Just be sure to pre-cook any meats and sauté vegetables if they release a lot of moisture.
