 STEP 1: 

I dropped butter and diced onions into a large pot over medium heat.

I cooked the onions until they were translucent.

I reduced the heat to medium low and left the soup to simmer for 15 minutes, stirring occasionally.

After 15 minutes I added potato gnocchi and chopped chicken to the pot and stirred well.

I left the soup to continue simmering until the gnocchi were tender and cooked through.

 STEP 7: 

I removed the pot from the heat and added shredded cheddar and parmesan.

I stirred the cheese into the soup.

  • ¼ cup butter
  • 1 cup diced onions
  • 1 tablespoon chopped garlic
  • ¼ cup flour
  • 4 cups chicken broth
  • 3 cups half and half
  • 1 tablespoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teapsoon pepper
  • 3 cups broccoli florets, chopped small
  • 1 lb potato gnocchi
  • 2 cups chopped rotisserie chicken
  • 3 cups shredded cheddar cheese
  • ⅓ cup shredded parmesan

Instructions

  1. Drop the butter into a large pot over medium heat.
  2. Add the diced onions and cook until they are translucent.
  3. Add the chopped garlic. Stir and cook for a couple minutes.
  4. Add the flour. Stir well and continue cooking for 3 minutes.
  5. Add the broth and stir well until it thickens slightly.
  6. Add the half and half, onion powder, paprika, salt and pepper and stir well.
  7. Add the broccoli, stir and bring to a soft boil.
  8. Reduce the heat to medium low and leave the soup to simmer for 15 minutes, stirring occassionally.
  9. After 15 minutes, add the gnocchi and chopped chicken to the pot. Stir well.
  10. Continue simmering until the gnocchi are tender and cooked through. 5 - 10 minutes.
  11. Remove the pot from the heat and stir in the cheddar and parmesan.
  12. Serve and enjoy!
