  • 2 medium sweet potatoes
  • 2 tablespoon milk
  • 1 teaspoon vanilla extract

  2. Wash the sweet potatoes and pierce all over with a fork. Bake in the oven for 45 minutes.
  3. Slice sweet potatoes in half lengthwise with a sharp knife. Then scoop out the center of the sweet potatoes, leaving a little around all of the edges and bottom.
  4. Add the sweet potato filling to a bowl along with the milk, vanilla, cinnamon and salt, and mash with a fork, stirring well to combine.
  5. Arrange sweet potato shells on a small baking sheet, cut side up and spoon the filling into each.
  6. Top the filled sweet potatoes with marshmallows and pecans. Broil for a couple of minutes to toast the marshmallows.
