Erin's Tips for the Best Dill Pickle and Bacon Green Bean Casserole

  • Thaw and Drain the Green Beans: Make sure your frozen green beans are completely thawed and well drained before mixing them with the other ingredients to prevent a watery casserole.
  • Cook the Bacon Until Crispy: Crispy bacon adds the best texture and smoky flavour. Drain it on paper towels before adding it to the casserole.
  • Use Dill Pickles, Not Sweet Pickles: Stick with classic dill pickles for that bold, tangy flavour. Sweet pickles will change the overall taste of the casserole.
  • Shred Your Own Cheese: Freshly shredded Swiss cheese melts more smoothly than pre-shredded cheese and gives the casserole a creamier texture.
  • Don't Skip the Pickle Juice: The pickle juice adds extra tanginess to the creamy sauce and helps bring out the dill pickle flavour.
  • Use Fresh Dill: Fresh dill provides the best flavour for this recipe. Dried dill can be used in a pinch, but the flavour won't be quite the same.
  • Watch the Fried Onions: Keep an eye on the casserole during the last few minutes of baking to prevent the crispy fried onions from getting too dark.
  • Save Some Bacon for Topping: Reserve a couple of tablespoons of crispy bacon to sprinkle over the casserole after baking for extra crunch and flavour.
  • Add the Pickle Topping After Baking: Wait until the casserole comes out of the oven before adding the sliced dill pickles so they stay crisp and tangy.
  • Taste Before Adding Salt: Bacon, pickles, Swiss cheese and everything bagel seasoning already contain plenty of salt, so you likely won't need to add any extra.
  • Let It Rest Before Serving: Allow the casserole to sit for about 5 minutes after removing it from the oven so the creamy sauce can thicken slightly.
  • Adjust the Pickle Flavour: For an extra tangy casserole, add a little more chopped dill pickle or pickle juice to suit your taste.
  • Fresh Green Beans: Swap the frozen green beans for fresh green beans. Trim and blanch them until just tender before adding them to the casserole.
  • Canned Green Beans: Use well-drained canned green beans instead of frozen for an even quicker preparation. Keep in mind that the texture will be softer.
  • Cream of Chicken Soup: Replace the cream of mushroom soup with cream of chicken soup for a slightly different savoury flavour.
  • Cream of Celery Soup: Cream of celery soup is another delicious alternative that pairs well with the dill pickles and green beans.
  • Greek Yogurt: Substitute plain Greek yogurt for the sour cream to add a slightly tangier flavour. Full-fat Greek yogurt works best for a creamy texture.
  • Mozzarella Cheese: Swap the Swiss cheese for shredded mozzarella if you prefer a milder, creamier cheese flavour.
  • Cheddar Cheese: Use shredded cheddar instead of Swiss for a sharper, cheesier casserole that pairs beautifully with the bacon and pickles.
  • Turkey Bacon: Replace regular bacon with turkey bacon for a lighter alternative that still adds smoky flavour.
  • Make It Vegetarian: Leave out the bacon and use a vegetarian cream of mushroom soup for a meatless version of this casserole.
  • Bread Crumb Topping: Swap the French fried onions for buttery panko bread crumbs if you prefer a different crunchy topping.
  • Crushed Potato Chips: Replace the fried onions with crushed plain or dill pickle potato chips for an extra salty, crunchy topping. Add them near the end of baking to prevent burning.
  • Spicy Dill Pickle Casserole: Use spicy dill pickles or add a pinch of crushed red pepper flakes for a little heat.
  • Ranch Seasoning: Add a teaspoon of ranch seasoning for an extra herby, savoury flavour that complements the dill pickles.

Can I make Dill Pickle and Bacon Green Bean Casserole ahead of time?

  • Yes! You can assemble the casserole up to 24 hours in advance and store it covered in the refrigerator. Leave off the French fried onions until just before baking so they stay crispy, and allow a few extra minutes of baking time if the casserole is going into the oven cold.

Is this casserole very sour or tangy?

  • This casserole has a noticeable dill pickle flavour, but the cream of mushroom soup, sour cream and melted Swiss cheese help balance the tanginess. If you prefer a milder pickle flavour, you can slightly reduce the amount of pickle juice or chopped dill pickles.

Can I freeze Dill Pickle and Bacon Green Bean Casserole?

  • You can freeze this casserole, but it is best enjoyed fresh because the sour cream-based sauce may separate and become grainy after thawing. The green beans and pickles may also soften, and the fried onion topping will lose its crunch.

How do I store leftover green bean casserole?

  • Store leftovers in an airtight container in the refrigerator for up to 3–4 days. Allow the casserole to cool before refrigerating, and avoid leaving it at room temperature for more than 2 hours.
