  • Italian Sausage Links – I used Italian sausage links cut into 1 inch pieces for this recipe. You can use mild, hot, or sweet Italian sausage depending on the flavor and spice level you prefer.
  • Gnocchi – Shelf-stable, refrigerated, or frozen gnocchi can work for this recipe. The gnocchi roasts right on the sheet pan, giving it a tender center and lightly crisp edges.
  • Red Bell Pepper and Green Bell Pepper – Bell peppers add color, sweetness, and roasted vegetable flavor to the sheet pan. Slice them into bite-sized pieces so they cook evenly with the sausage and gnocchi.
  • Minced Garlic – Garlic adds savory flavor and pairs perfectly with the sausage, peppers, and parmesan.
  • Salt and Pepper – Simple seasonings help bring out the flavor of the sausage, gnocchi, and vegetables.
  • Red Pepper Flakes – Red pepper flakes add a little heat to the dish. You can use less or leave them out if you prefer a milder dinner.
  • Olive Oil – Olive oil helps coat everything so the gnocchi, sausage, and peppers roast nicely in the oven.
  • Shredded Parmesan – Parmesan adds a salty, cheesy finish once everything comes out of the oven.
  • Fresh Chopped Parsley – Parsley adds a fresh pop of color and flavor before serving.

Erin's Tips for the Best Sheet Pan Sausage and Gnocchi

  • Cut everything evenly so the sausage, peppers, and gnocchi roast at the same pace.
  • Use a large enough sheet pan so the ingredients have room to roast instead of steam.
  • Toss everything well with the olive oil and seasonings so every bite gets coated with flavor.
  • Check your sausage pieces before serving to make sure they are cooked through.
  • Stir halfway through baking if you want more even browning on the gnocchi and sausage.
  • Use shelf-stable or refrigerated gnocchi for the easiest prep. Frozen gnocchi may need a few extra minutes.
  • Add the parmesan after baking so it melts slightly without burning on the pan.
  • Serve it right away while the gnocchi is tender, the sausage is juicy, and the parmesan is warm and melty.
  • Switch the sausage – Use mild, hot, sweet, or chicken Italian sausage depending on the flavor you want.
  • Try a different gnocchi – Potato gnocchi, cauliflower gnocchi, or stuffed gnocchi can all work in this recipe.
  • Change the peppers – Use any color of bell peppers you have on hand, or add sliced onions for extra roasted flavor.
  • Make it spicier – Add more red pepper flakes or use hot Italian sausage for a little extra kick.
  • Add more vegetables – Zucchini, mushrooms, cherry tomatoes, broccoli, or red onion would all be great additions.
  • Use a different cheese – Swap the parmesan for asiago, pecorino romano, mozzarella, or a sprinkle of feta.
  • Add a sauce drizzle – Finish with pesto, marinara, balsamic glaze, or a little garlic butter for extra flavor.
  • Make it extra hearty – Add extra sausage or another package of gnocchi if you want a larger, more filling meal.

Can I use frozen gnocchi?

  • Yes, frozen gnocchi can be used, but it may need a few extra minutes in the oven. For best results, spread it out on the pan so it has room to roast.

Do I need to boil the gnocchi first?

  • No, the gnocchi goes straight onto the sheet pan. It cooks in the oven with the sausage, peppers, olive oil, and seasonings.

Can I add more vegetables?

  • Yes, this recipe is easy to customize. Zucchini, mushrooms, red onion, broccoli, or cherry tomatoes would all work well.

How should I store leftovers?

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.

How do I reheat leftovers?

  • Reheat leftovers in the microwave or warm them in the oven until heated through. The oven will help bring back some of the roasted texture.

Can I make this recipe ahead of time?

  • This recipe is best served fresh, but you can chop the peppers and sausage ahead of time to make prep faster. Keep them stored separately in the refrigerator until you are ready to cook.
