Erin's Tips for the Best Cheeseburger Tortellini Soup
- Use Lean Ground Beef: I recommend using lean ground beef to keep the soup from becoming too greasy. If using regular ground beef, drain off any excess grease after browning.
- Brown the Beef Well: Let the ground beef develop a little colour as it cooks for extra savory cheeseburger flavour.
- Don't Skip the Worcestershire Sauce: It adds a rich, savory depth that really brings out the cheeseburger flavour.
- Cook the Flour: Let the flour cook with the butter and beef for a few minutes to eliminate any raw flour taste and help thicken the soup.
- Use the Entire Can of Rotel: Don't drain the tomatoes and green chilies. The liquid adds extra flavour to the broth.
- Choose Your Favourite Tortellini: I used cheese and bacon flavoured tortellini, but regular cheese tortellini works just as well.
- Watch the Tortellini: Cooking times can vary by brand, so check the package directions and cook until the pasta is tender without becoming mushy.
- Shred Your Own Cheddar: Freshly shredded cheddar melts more smoothly than packaged shredded cheese and gives the soup a creamier texture.
- Add the Cheese Off the Heat: Remove the pot from the heat before stirring in the cheddar to help prevent the cheese from becoming grainy.
- Keep the Heat Gentle: Avoid boiling the soup vigorously after adding the half and half to keep the broth smooth and creamy.
- Adjust the Thickness: The soup will thicken as it sits because the tortellini absorbs liquid. Add a splash of chicken broth or half and half if it gets too thick.
- Make Homemade Hamburger Bun Croutons: I used the back end of a frosting piping tip to cut little circles from sesame seed hamburger buns, then toasted them until crispy. They're a fun way to give the soup that authentic cheeseburger feel.
Substitutions and Variations
- Ground Turkey: Swap the ground beef for ground turkey or ground chicken for a lighter version of this hearty soup.
- Italian Sausage: Replace some or all of the ground beef with mild Italian sausage for a different savory flavour.
- Different Tortellini: I used cheese and bacon tortellini, but regular cheese, spinach and ricotta, or beef tortellini would all work well.
- Beef Broth: Substitute beef broth for the chicken broth to give the soup a richer, beefier flavour.
- Heavy Cream: Replace the half and half with heavy cream for an extra rich and indulgent soup.
- Whole Milk: Use whole milk instead of half and half for a lighter broth, although the soup won't be quite as rich and creamy.
- Different Cheeses: Swap some of the cheddar for Monterey Jack, Colby Jack, or Pepper Jack cheese to change up the flavour.
- Spicy Cheeseburger Soup: Use hot Rotel, add diced jalapeños, or sprinkle in some cayenne pepper for an extra kick.
- Mild Version: Replace the Rotel with regular canned diced tomatoes if you prefer a soup without the heat from green chilies.
- Bacon Cheeseburger Tortellini Soup: Stir cooked and crumbled bacon directly into the soup for smoky bacon flavour in every bite.
- Add Vegetables: Stir in diced bell peppers, carrots, celery, or mushrooms for extra flavour and texture.
- Pickle Lovers' Version: Add a small amount of finely chopped dill pickles or a splash of pickle juice for a tangy cheeseburger-inspired twist.
- Mustard Flavour: Stir in a teaspoon or two of yellow mustard or Dijon mustard to give the soup a little extra classic burger flavour.
- Different Pasta: If you can't find tortellini, try small pasta shells, rotini, or elbow macaroni. Adjust the cooking time as needed.
Frequently Asked Questions
Can I use frozen tortellini instead of refrigerated tortellini?
- Yes! Frozen tortellini works well in this soup. You may need to increase the cooking time slightly, so follow the package directions and cook until the tortellini is tender.
Can I make Cheeseburger Tortellini Soup ahead of time?
- Yes, but I recommend cooking the tortellini separately if you're making the soup ahead of time. Store the pasta and soup separately, then combine them when reheating to prevent the tortellini from becoming too soft.
How long does Cheeseburger Tortellini Soup last in the refrigerator?
- Store leftover soup in an airtight container in the refrigerator for up to 3–4 days. The tortellini will continue absorbing liquid as it sits, so you may need to add a splash of broth when reheating.
Can I freeze Cheeseburger Tortellini Soup?
- I don't recommend freezing the fully prepared soup because the creamy broth can separate and the tortellini may become mushy when thawed. For better results, freeze the soup base before adding the half and half, tortellini and cheese, then add those ingredients when reheating.
