Can I use chicken thighs instead of chicken breasts?

  • Yes! Boneless, skinless chicken thighs work well in this recipe and will give you especially tender and juicy salsa chicken.

What kind of salsa should I use?

  • Use any salsa you enjoy. Mild, medium or hot salsa all work, so you can easily adjust the spice level to suit your taste.

Can I shred the chicken?

  • Absolutely. Once cooked, use two forks to shred the chicken directly in the crockpot, then stir it into the salsa before adding the cheese.

Ingredients

  • 4 chicken breast, skinless and boneless
  • ¾ teaspoon salt
  • 1 ½ cup salsa
  • 3 tablespoons chicken broth (optional you just need it if you are using a chunky salsa)
  • ⅓ cup Monterey jack shredded

Optional

  • 1 teaspoon fresh cilantro, chopped
  • 1 tablespoon green onions, chopped

Instructions

  1. Start by placing the chicken breasts at the bottom of your slow cooker. Sprinkle the salt evenly over the chicken to season it just right.
  2. Pour the 1 ½ cups of salsa all over the chicken. Choose your favorite salsa - whether it's mild, medium, or spicy, this is where you can customize the heat level to your liking.
  3. Drizzle the 3 tablespoons of chicken broth into the slow cooker if your salsa is chunky.
  4. Put the lid on your slow cooker and set it to cook on low for about 4-6 hours. The exact time may vary depending on your slow cooker, so keep an eye on it. You'll know it's ready when the chicken is tender and easy to shred with a fork.
  5. Once your chicken is perfectly cooked, it's time to add the cheese. Sprinkle the Monterey Jack cheese evenly over the chicken. Then, pop the lid back on and let it cook for an additional 15-30 minutes or until the cheese is melty and irresistible.
  6. Serve and garnish with cilantro and green onions if desired.
  7. Enjoy!
