  • 1 lb ground beef
  • ½ onion, diced
  • 15 oz can Black beans, drained and rinsed 
  • 15.5 oz can Pinto beans, drained and rinsed

  • 1 lb ground beef
  • ½ onion, diced
  • 15 oz can Black beans, drained and rinsed
  • 15.5 oz can Pinto beans, drained and rinsed
  • 15.25 oz can sweet corn, drained
  • 14.5 oz can diced tomatoes, drained
  • 4 oz can Green chilis, drained
  • 28 oz can enchilada sauce
  • 14.5 oz can Chicken broth
  • 1 oz packet taco seasoning
  • 1 oz packet ranch seasoning
  • 1 tablespoon garlic
  • 2 teaspoon smoked paprika
  • 1 teaspoon cumin

Instructions

  1. Drain and rinse the beans, then drain the corn, tomatoes and green chilis.
  2. Add the ground beef and onion to a medium skillet and cook over medium heat, breaking the meat apart as it cooks, until no longer pink.
  3. Dump all of the ingredients into a large stock pot and bring to a boil.
  4. Reduce the heat to medium-low, cover the pot and leave the soup to simmer for 30 minutes.
  5. Serve and enjoy!
