This mini meatloaf recipe takes about forty-five minutes from start to finish and produces twelve muffin sized meatloaves.

To make these meatloaf muffins, I started by dumping a pound of lean ground beef into a large mixing bowl.
I added some Lipton Onion Soup Mix, diced onions, eggs and Heinz chili sauce to the bowl.
Then I placed about thirty Ritz Crackers into a large Ziploc bag.
I used a rolling pin to crush the Ritz Crackers.
Then I added the crushed crackers to the mixing bowl.
I used my hands to mix all of the ingredients together until they were fully combined.
Then I sprayed a muffin pan with cooking spray and scooped the meat mixture into the cups pressing down gently as I went.
I spooned some more Heinz chili sauce on top of each meatloaf muffin.
Then I placed the muffin tin in the oven and baked the meatloaves until they reached an internal temperature of 160F.
I allowed the meatloaf muffins to rest in the pan for a few minutes before lifting them out and serving them.
These individual meatloaves pair perfectly with mashed potatoes.

- Place the pan in the oven and bake until the meatloaves have reached an internal temperature of 160F. 30-33 minutes.
- Remove the pan from the oven and allow the meatloaves to rest for a few minutes before lifting them out of the pan.
