Step by Step Instructions
STEP 1:
I poured flour, baking soda, baking powder and salt into a medium mixing bowl and whisked them together well.


STEP 2:
I poured an and sugar into a separate large mixing bowl.
I used an electric mixer to beat them together until light and fluffy.
I continued adding eggs one at a time mixing well each time and then I added some vanilla extract.


STEP 3:
I gradually added the dry ingredients to the wet ingredients along with sour cream, olive oil and lemon juice.


STEP 4:
I greased and floured a 9 x 5 inch loaf pan and poured my batter into the pan.

STEP 5:
I baked the loaf until a toothpick inserted in the center came up clean and then allowed it to cool in the pan for 15 minutes.
Then I carefully remove the loaf from the pan and transferred it to a wire rack to finish cooling.


STEP 6:
Once the loaf was cooled, I mixed half a pouch of Betty Crock cream cheese frosting with some hot water to thin it out and make glaze.
I drizzled the glaze over the loaf.

Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, using an electric mixer, beat 1 of the the eggs and granulated sugar together until light and fluffy. Add the remaining eggs one at a time, mixing well after each addition. Then mix in the vanilla extract.
- Gradually add the dry ingredients to the batter mixture, alternating with the sour cream, olive oil and lemon juice. Start and end with the flour mixture. Mix just until combined.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for about 10-15 minutes. Then, carefully remove it from the pan and transfer it to a wire rack to cool completely.
- Mix 2-3 tablespoon of hot water with half pouch Betty Crocker cream cheese frosting to reach make the glaze.
- Once the cake is completely cooled, drizzle the glaze over the top. You can garnish with additional lemon zest if desired.
