  • 2 cups all purpose flour
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 2 tsp. pumpkin pie spice
  • ½ tsp. cinnamon
  • ¼ cup brown sugar
  • ¼ cup granulated sugar

Instructions

    1. In a medium mixing bowl, whisk together the flour, baking powder, salt, pumpkin pie spice, and cinnamon.
    2. In a large mixing bowl, whisk together the brown sugar, granulated sugar, vanilla, pumpkin, eggs, melted butter, and milk.
    3. Add the dry ingredients to the wet, and fold together. Careful not to overmix, the batter will be lumpy and that's okay.
    4. Let the batter set for about 5 minutes.
    5. Heat your skillet or griddle, and add a bit of nonstick spray if needed for your pan.
    6. Add about ⅓ cup of batter for each pancake.Cook for about 4 minutes per side.
    7. Top the pancakes with butter, whipped cream, extra pumpkin pie spice, syrup, chopped nuts, etc..
    8. Serve and enjoy!
