Ingredients You’ll Need

  • 1 lb sausage meat ( I used maple flavoured )
  • ½ cup cooked and crumbled bacon
  • 3 cups complete pancake mix ( the just add water kind )
  • 1 ½ cups water
  • ½ cup maple syrup
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 cup shredded cheddar cheese

 Step by Step Instructions

 STEP 1: 

I started by cooking and crumbling some sausage meat in a large skillet over medium-high heat.

Ingredients

  • 1 lb sausage meat ( I used maple flavoured )
  • ½ cup cooked and crumbled bacon
  • 3 cups complete pancake mix ( the just add water kind )
  • 1 ½ cups water

Instructions

  1. Preheat oven to 400F.
  2. Drop the sausage meat into a large skillet over medium-high heat.
  3. Cook the sausage until it is fully browned and crumble it well.
  4. Add the crumbled bacon to the skillet and continue cooking for a couple minutes to crisp it up and then set the skillet aside.
  5. Pour the pancake mix, water, maple syup, salt and pepper into a large mixing bowl and whisk until fully combined.
  6. Add the crumbled sausage and bacon mixture to the bowl.
  7. Add the shredded cheddar to the bowl.
  8. Stir until the meat and cheese are well combined with the pancake batter.
  9. Spray your muffin tins well with cooking spray.
  10. Scoop about ¼ cup of the mixture into each muffin well.
  11. Place the muffin tins in the oven and bake until a toothpick inserted in the center comes up clean. 13 - 15 minutes.
  12. Remove the muffin tins from the oven and allow the muffins to cool in the pans for about 5 minutes.
  13. After 5 minutes carefully remove the muffins from the pan. Using silicone muffin pans makes it really easy to pop them out.
  14. Serve and enjoy!
