FREQUENTLY ASKED QUESTIONS
Can I use chicken thighs instead of chicken breasts?
- Yes! Boneless, skinless chicken thighs work wonderfully in this recipe. They stay juicy and flavorful and may need an extra few minutes of cooking time.
Can I use light coconut milk?
- You can, but full-fat coconut milk creates a richer, creamier sauce. Light coconut milk will result in a thinner sauce with a milder coconut flavor.
Can I make this recipe ahead of time?
- Absolutely! The flavors continue to develop as it sits, making it a great meal prep option for lunches or dinners throughout the week.
