  • 2 tablespoons olive oil
  • 4 boneless, skinless chicken breasts,
  • 1 large red onion, chopped
  • 3 cloves garlic, minced
  • 2 teaspoons fresh ginger, minced
  • 1 (13.5 oz) can full-fat coconut milk
  • Zest and juice of 1 lime
  • 2 tablespoons fresh cilantro, chopped

 STEP 1: 

I heated some olive oil in a large skillet over medium-high heat and added 4 boneless, skinless chicken breasts to the skillet.

I cooked the chicken breasts until they were nicely browned on both sides and then removed them and set them aside.

 STEP 2: 

I added some chopped onions to the skillet and cooked them for a few minutes.

I also added some minced garlic and ginger to the skillet.

I added some coconut milk to the skillet, stirred well and brought it to a simmer.

I stirred in some lime juice and lime zest and returned the seared chicken breasts to the skillet.

I simmered the dish until the chicken was fully cooked and the sauce was slightly thickened.

I added chopped cilantro right before serving.

  • 2 tablespoons olive oil
  • 4 boneless, skinless chicken breasts,
  • 1 large red onion, chopped
  • 3 cloves garlic, minced
  • 2 teaspoons fresh ginger, minced
  • 1 (13.5 oz) can full-fat coconut milk
  • Zest and juice of 1 lime
  • 2 tablespoons fresh cilantro, chopped

Instructions

    1. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for about 5–6 minutes, turning halfway. until golden brown on all sides. Remove the chicken from the skillet and set aside.
    2. In the same skillet, add the chopped onion. Sauté for 3–4 minutes, scraping up any browned bits from the bottom. Add the garlic and ginger, and cook for another 30 seconds, just until fragrant.
    3. Pour in the coconut milk, stirring well to combine. Bring to a gentle simmer, the sauce will look creamy and slightly thickened.
    4. Stir in the lime zest and lime juice. The zest provides bright citrus aroma, while the juice cuts through the richness of the coconut milk for perfect balance.
    5. Add the browned chicken pieces back into the skillet. Simmer uncovered for 5–8 minutes, until the chicken is fully cooked and the sauce thickens slightly.
    6. Remove from heat and stir in the chopped cilantro. Serve immediately with rice, quinoa, or sautéed vegetables for a colorful, flavorful plate.
