  • Sweetened condensed milk: This gives the pudding mixture its rich sweetness and helps create that thick, creamy texture.
  • Water: Used to thin out the sweetened condensed milk and help the instant pudding mix set properly.
  • Vanilla instant pudding mix: Make sure you are using instant pudding mix, not cook-and-serve. This creates the creamy base for the dessert.
  • Biscoff cookie butter: Melted cookie butter is mixed right into the pudding for that sweet, spiced Biscoff flavor. You can also save a little extra for drizzling over the top before serving.
  • Cool Whip: Folded into the pudding mixture to make it light, fluffy and easy to spread between the layers.
  • Biscoff cookies: These create the cookie layers in the banana pudding and soften as the dessert chills. You can crush a few extra cookies for topping.
  • Bananas: Use ripe but firm bananas so they are sweet without becoming too mushy in the pudding layers.

Erin's Tips for the Best Biscoff Banana Pudding

  • Use instant pudding mix: Make sure you are using vanilla instant pudding mix, not cook-and-serve pudding, so the filling sets up properly.
  • Melt the cookie butter gently: Warm the Biscoff cookie butter just enough to make it pourable before whisking it into the pudding mixture.
  • Use ripe but firm bananas: Bananas with a few spots will give you the best sweetness, but avoid overly soft bananas so the layers do not get mushy.
  • Let it chill long enough: Give the pudding at least 4 hours in the fridge so the filling can set and the cookies can soften into the layers.
  • Make it the night before: This dessert is a great make-ahead option because the texture gets even better after chilling overnight.
  • Save toppings for serving: Add crushed Biscoff cookies and a drizzle of melted cookie butter right before serving so the top looks fresh and pretty.
  • Slice the bananas as you layer: Cut the bananas right before adding them to the dish to help keep them from browning too quickly.
  • Spread each layer evenly: Smooth out the pudding mixture before adding the cookies and bananas so every scoop has a little bit of everything.
  • Swap the pudding flavor: Vanilla pudding keeps the banana pudding flavor classic, but cheesecake pudding or banana cream pudding would also work well.
  • Use homemade whipped cream: You can use homemade whipped cream in place of Cool Whip if you prefer. Just make sure it is whipped to stiff peaks so the filling stays fluffy.
  • Try different cookies: Biscoff cookies give this dessert its signature flavor, but vanilla wafers, graham crackers or shortbread cookies can be used in a pinch.
  • Add extra cookie butter: Drizzle a little melted cookie butter between the layers for an even richer Biscoff flavor.
  • Make it in individual cups: Layer the pudding, cookies and bananas in small cups or jars for an easy party dessert.
  • Add a cheesecake twist: Mix softened cream cheese into the pudding mixture for a thicker, tangier filling.
  • Use extra bananas: Add another banana if you want more fruit in every scoop.
  • Top it your way: Finish the pudding with crushed Biscoff cookies, sliced bananas, whipped topping, caramel sauce or extra melted cookie butter.

Can I make Biscoff banana pudding ahead of time?

  • Yes. This dessert is perfect for making ahead because it needs time to chill and set. You can make it the night before serving for the best texture.

How should I store leftovers?

  • Store leftovers covered in the refrigerator. This dessert is best enjoyed within 2-3 days.

Can I freeze Biscoff banana pudding?

  • I do not recommend freezing this dessert. The pudding, whipped topping and bananas can separate or become watery once thawed.

Can I make this recipe in individual cups?

  • Yes. You can layer the pudding, cookies and bananas in small cups or jars for an easy party dessert or make-ahead individual servings.
