This fajita chicken dish serves four and takes less than 40 minutes from start to finish.

To make this Instant Pot fajita chicken, I started by slicing some boneless, skinless chicken thighs into strips.

Then I set my Instant Pot to Saute Less for 7 minutes.

I added a dab of margarine to the pot.

Then I added the strips of chicken to the pot.

I cooked the chicken for a couple minutes and then added two packets of fajita seasoning to the pot.

I stirred the chicken around until it was well coated in the fajita seasoning.

Then I left the chicken to continue cooking, stirring occasionally.

When the Instant Pot turned off the chicken was still partially pink.

I added some condensed chicken broth to the pot and stirred well, being sure to gently scrape up any fajita seasoning that was stuck to the bottom of the pot.

Then I added some water to the pot.

I added some long grain white rice.

I gently pushed the rice down until it was submerged in the liquid.

Then I added some condensed cream of chicken soup, diced red peppers, diced green peppers and diced onions to the pot.

I placed the lid on the Instant Pot, turned the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 8 minutes.

Once the Instant Pot was done cooking I left it to do a natural release for 3 minutes.

Then I turned the steam release handle to the venting position and finished with a quick release.

After removing the lid from the Instant Pot I stirred all of the ingredients together.

Then I added some shredded mozzarella and cheddar cheese to the pot.

I stirred until the cheese was melted.

Instant Pot Cheesy Fajita Chicken and Rice is a delicious pressure cooker chicken thigh recipe loaded with peppers and fajita seasoning.

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 2 oz fajita seasoning (2 packets)
  • 10.5 oz condensed chicken broth
  • 2 cups water
  • 2 cups long grain rice
  • 10.5 oz condensed cream of chicken soup
  • 1 cup red peppers, diced
  • 1 cup green peppers, diced
  • 1 cup yellow onion, diced
  • 3 cups shredded mozzarella and cheddar

Instructions

  1. Slice chicken thighs into strips.
  2. Set Instant Pot to Saute Less 7 minutes.
  3. Add a dab of butter or margarine to the pot.
  4. Add the strips of chicken to the pot and spread them out.
  5. After a couple minutes, add the fajita seasoning to the pot.
  6. Stir until the chicken is well coated in the seasoning.
  7. Leave the chicken to cook, stirring occasionally until the Instant Pot turns off.
  8. The chicken will still be partially pink.
  9. Add the condensed chicken broth to the pot and stir, gently scraping any stuck fajita seasoning off the bottom of the pot.
  10. Add the water and the long grain rice.
  11. Gently push the rice down until it is submerged in the liquid.
  12. Add the condensed cream of chicken soup, diced red peppers, diced green peppers and diced onions.
  13. Do not stir!
  14. Place the lid on the Instant Pot, turn the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 8 minutes.
  15. Once the Instant Pot is done cooking, leave it to do a natural release for 3 minutes.
  16. After 3 minutes, turn the steam release handle to the venting position and finish with a quick release.
  17. Remove the lid and stir all of the ingredients together.
  18. Add the shredded mozzarella and cheddar to the pot.
  19. Stir until the cheese is melted.
  20. Serve immediately.
  21. Enjoy!
