This fajita chicken dish serves four and takes less than 40 minutes from start to finish.
To make this Instant Pot fajita chicken, I started by slicing some boneless, skinless chicken thighs into strips.
Then I set my Instant Pot to Saute Less for 7 minutes.
I added a dab of margarine to the pot.
Then I added the strips of chicken to the pot.
I cooked the chicken for a couple minutes and then added two packets of fajita seasoning to the pot.
I stirred the chicken around until it was well coated in the fajita seasoning.
Then I left the chicken to continue cooking, stirring occasionally.
When the Instant Pot turned off the chicken was still partially pink.
I added some condensed chicken broth to the pot and stirred well, being sure to gently scrape up any fajita seasoning that was stuck to the bottom of the pot.
Then I added some water to the pot.
I added some long grain white rice.
I gently pushed the rice down until it was submerged in the liquid.
Then I added some condensed cream of chicken soup, diced red peppers, diced green peppers and diced onions to the pot.
I placed the lid on the Instant Pot, turned the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 8 minutes.
Once the Instant Pot was done cooking I left it to do a natural release for 3 minutes.
Then I turned the steam release handle to the venting position and finished with a quick release.
After removing the lid from the Instant Pot I stirred all of the ingredients together.
Then I added some shredded mozzarella and cheddar cheese to the pot.
I stirred until the cheese was melted.

Ingredients
- 1.5 lbs boneless, skinless chicken thighs
- 2 oz fajita seasoning (2 packets)
- 10.5 oz condensed chicken broth
- 2 cups water
- 2 cups long grain rice
- 10.5 oz condensed cream of chicken soup
- 1 cup red peppers, diced
- 1 cup green peppers, diced
- 1 cup yellow onion, diced
- 3 cups shredded mozzarella and cheddar
Instructions
- Slice chicken thighs into strips.
- Set Instant Pot to Saute Less 7 minutes.
- Add a dab of butter or margarine to the pot.
- Add the strips of chicken to the pot and spread them out.
- After a couple minutes, add the fajita seasoning to the pot.
- Stir until the chicken is well coated in the seasoning.
- Leave the chicken to cook, stirring occasionally until the Instant Pot turns off.
- The chicken will still be partially pink.
- Add the condensed chicken broth to the pot and stir, gently scraping any stuck fajita seasoning off the bottom of the pot.
- Add the water and the long grain rice.
- Gently push the rice down until it is submerged in the liquid.
- Add the condensed cream of chicken soup, diced red peppers, diced green peppers and diced onions.
- Do not stir!
- Place the lid on the Instant Pot, turn the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 8 minutes.
- Once the Instant Pot is done cooking, leave it to do a natural release for 3 minutes.
- After 3 minutes, turn the steam release handle to the venting position and finish with a quick release.
- Remove the lid and stir all of the ingredients together.
- Add the shredded mozzarella and cheddar to the pot.
- Stir until the cheese is melted.
- Serve immediately.

Hi if I am using chicken breast instead of thighs would I still cook for the same amount of time? Thanks
