To make these cookies, I started by dumping some eggs and vegetable oil into a large mixing bowl.

I whisked the eggs and oil together well and set the bowl aside.

Then I dumped a box of strawberry cake mix into a separate mixing bowl.

I added some baking powder to the bowl.

I stirred the cake mix and baking powder together well.

I added the dry ingredients to the bowl with the wet ingredients.

I stirred all of the ingredients together well.

I folded the strawberries into the cookie dough.

I lined two cookie sheets with parchment paper.

I scooped 6 balls of cookie dough onto each baking sheet.

I baked until the cookies were just starting to brown.

I left the cookies to cool completely before frosting them.

I took 1 out of the 12 cookies and crumbled it to use as topping for the remaining 11 cookies.

To prepare the frosting, I dumped some softened cream cheese, butter and vanilla into a mixing bowl.

I used an electric mixer to cream the ingredients together until smooth.

I added some powdered sugar to the bowl.

I continued mixing until the ingredients were fully combined.

Then I scooped the frosting into a piping bag.

I frosted each of the cookies.

Then I sprinkled the crumbs from the crumbled cookie on top.

  4. In a separate small mixing bowl, whisk together the strawberry cake mix and baking powder until completely combined.
  5. Add the dry ingredients to the wet ingredients.
  6. Mix with a spoon until completely combined, and a thick batter forms.
  7. Fold in the chopped strawberries.
  8. Using an ice cream scoop, scoop 6 dough balls onto each cookie sheet.
  9. Bake for 15-20 minutes.

  11. Allow cookies to cool completely before frosting.
  12. Crumble one of the cookies to use as a topping for the other cookies.
  13. In a large mixing bowl, beat the cream cheese, butter, and vanilla extract until smooth and creamy.
  14. Add the powdered sugar a little bit at a time and mix until completely combined.

  16. Top with crumbs from the crushed cookie, and sliced strawberries.
