To make these cookies, I started by dumping some softened butter into a large mixing bowl.

I used an electric mixer to cream the butter and sugar together until smooth.

I added some all purpose flour and cornstarch to the bowl.

I continued mixing with the electric mixer until well combined.

Then I added some lemon zest and lemon extract to the bowl.

I mixed well again.

I used a cookie scoop to scoop the dough by the tablespoon and rolled it into balls.

I placed the dough balls on a parchment lined baking sheet.

I used a fork to gently flatten out the dough balls.

Then I baked the cookies until they were just starting to brown around the bottom edges.

I removed the baking sheet from the oven and left the cookies to cool on the pan.
