  • 1 ½ cups pumpkin puree
  • ½ cup unsalted butter
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • ½ cup sour cream
  • 2 large eggs
  • 2 tsp. vanilla extract
  • 1 ¾ cups all purpose flour
  • ½ cup cocoa powder
  • 1 tsp. baking soda

  • 1 cup semi sweet chocolate chips

Instructions

    1. Preheat your oven to 375 degrees Fahrenheit, and line a muffin tin with cupcake liners.
    2. Chop the butter into a few pieces and add to a microwave safe bowl. Microwave for 30 second increments, until melted.
    3. In a large mixing bowl, combine melted butter, pumpkin puree, brown sugar, granulated sugar, sour cream, vanilla extract, and egg. Whisk until well combined.
    4. In a medium mixing bowl, whisk together the flour, cocoa powder, baking soda, and baking powder.
    5. Add the dry ingredients to the pumpkin mixture, and whisk until just combined. Don't over mix.
    6. \Fold in the chocolate chips.
    7. Add about 3 tbsp. of batter to each cupcake liner.
    8. Bake for 20-22 minutes. Bake a second batch for the final 6 muffins.
    9. Allow the muffins to cool and enjoy.
