To make this meatloaf, I started by lining a loaf pan with aluminum foil and spraying it with cooking spray.
I dumped some ground beef into a mixing bowl.
Then I added some Italian seasoning and dry parsley to the bowl.
I added some salt, onion powder, minced onion and pepper to the bowl.
I mixed the ingredients together with my hands.
Then I added some Italian seasoned bread crumbs to the bowl.
I also added some diced onions.
I mixed the ingredients well with my hands again.
Then I added some ketchup and mustard to the bowl.
I mixed again.
Then I added some milk and an egg to the bowl.
I mixed until all of the ingredients were fully incorporated.
Then I scooped the mixture into the foil lined loaf pan and pressed it out evenly.
I used the foil to carefully lift the meatloaf out of the pan and placed it in the air fryer.
I cooked the meatloaf in the air fryer for 15 minutes.
While the meatloaf was in the air fryer I prepared the glaze.
I dumped some light brown sugar and onion powder into a bowl.
I added some balsamic vinegar and mixed well.
Then I added some ketchup and mixed well again.
Once the meatloaf had reached and internal temperature of 165F I brushed the glaze on top.
I continued cooking the meatloaf in the air fryer for an additional five minutes.
Then I took the meatloaf out of the air fryer and allowed it to rest for four minutes.
Then the meatloaf was ready to slice.

Ingredients You’ll Need to Make This Air Fryer Meatloaf:
- 1 pound ground beef (I used ground chuck)
- 1 teaspoon dry parsley
- 1 teaspoon Italian seasonings
- 1 teaspoon salt
- 1 teaspoon onion powder
- 1 teaspoon minced onion
- ½ teaspoon ground pepper
- ½ cup Italian seasoning bread crumbs
- ½ cup chopped onions (I diced mine as we wanted to have onion pieces, but if you want the taste without the big pieces, chopped the onions finely)
- 1 tablespoon ketchup
- 1 tablespoon yellow mustard (for another taste you can add Dijon mustard or for a more mustard taste you can add ground mustard)
- ⅓ cup milk
- 1 egg
Glaze
- 1 tablespoon packed light brown sugar
- 2 teaspoons onion powder
- 1 tablespoon Balsamic vinegar (you can omit or substitute with red wine vinegar)
- ½ cup ketchup
How to Make Air Fryer Meatloaf:
- Line a loaf pan (9 x 5 inches and also known as the bread pan) with aluminum foil. If you have a heavy-duty I would use that one, if not, double the layers so this way it will hold the shape better. Spray with cooking spray. Set aside.
- Preheat air fryer to 350F.
- In a large mixing bowl, mix the ground beef, dry parsley, Italian seasoning, salt, onion powder, minced onion, and ground pepper. Mix well. I use my hand but you could use a mixing spoon. I wouldn’t recommend using a whisk as the mixture will be stuck in the middle.
- Add the bread crumbs and the onions. Mix until all ingredients are well incorporated.
- Add the ketchup and yellow mustard. Mix well.
- Add the milk and the egg. Finally, mix so all ingredients are well incorporated and evenly throughout the meat.
- Pour the mixture into the prepared pan.
- With a fork, gently press down and spread evenly. NOTE: By pressing down you compact the mixture and it will hold its shape better.
- Gently remove the meatloaf from the pan by slowly lifting the aluminum paper.
- Place in the air fryer basket.
- Cook on manual for 15 minutes at 350F until the internal temperature has reached 165 degrees F.
- Meanwhile, in a medium bowl combine the light brown sugar, onion powder, and Balsamic vinegar. Mix well.
- Add the ketchup and mix until you have all ingredients incorporated.
- Once the meatloaf has reached an internal temperature of 165 degrees F, open the air fryer and brush the glaze on the loaf.
- Place back in the air fryer and cook for an additional 5 minutes at 350 degrees F on manual.
- Take it out of the air fryer and let it cool for 3 to 4 minutes.

Notes
- You can substitute the onion powder and the minced onion with garlic powder and minced garlic.
- I used red onions but you can use yellow or sweet onions
- The bread crumbs I used already have some Italian seasoning in them, if you take regular bread crumbs, you can add more Italian seasonings or leave it as is.
- You can also crumble croutons for your breadcrumbs, which add an extra flavor and texture.
- This meatloaf can be served with roasted potatoes, mashed potatoes, a side salad, or a plate of raw veggies (my kids' favorite.)
- The glaze is optional, it adds an extra layer of flavor and texture.
- Store the leftovers in the fridge for up to 4 days.
- You can do the mixture and freeze it in the shape of the pan. Thawed overnight and cook as directed.
