To make this meatloaf, I started by dumping some lean ground beef into a large mixing bowl.
I crushed up some BBQ flavoured potato chips and added them to the bowl.
I also added some eggs and diced onions to the bowl.
I added some Sweet Baby Ray’s BBQ sauce, salt and pepper to the bowl.
Then I added some shredded cheddar cheese to the bowl.
I used my hands to combine all of the ingredients well.
Then I lined a 9 x 5 loaf pan with aluminum foil and sprayed it with cooking spray.
I pressed the meat mixture into the lined loaf pan.
Then I spread some BBQ sauce on top.
I placed the pan in the oven and baked the meatloaf for forty minutes.
After forty minutes I removed the pan from the oven and sprinkled some shredded cheese on top.
I returned the pan to the oven and continued cooking the meatloaf until the cheese on top was fully melted and it had reached an internal temp of 160F.
I removed the pan from the oven and allowed the meatloaf to rest in the pan for five minutes.
After five minutes I used the foil to lift the meatloaf from the pan.
Then the meatloaf was ready to slice.
I served my meatloaf with a side of mac and cheese.
