Ingredients You’ll Need for Taco Meatloaf

  • 6 oz corn chips
  • 2 lbs lean ground beef
  • 2 eggs, large
  • 1 1/2 cups corn and black bean salsa (or chunky salsa)
  • 1 oz taco seasoning
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 2 cups shredded Mexican cheese blend

Step by Step Instructions for Making Taco Meatloaf 

 STEP 1: 

To make this taco meatloaf, I started by pouring some Fritos corn chips into a large Ziploc bag.

I used a rolling pin to crush the corn chips.

 STEP 2: 

I dumped two pounds of lean ground beef into a large mixing bowl.

I added two eggs and the crushed corn chips to the bowl with the ground beef.

 STEP 3: 

I also added some salsa, taco seasoning, salt, pepper and garlic powder to the bowl.

I used my hands to mix all of the ingredients together until fully combined.

 STEP 4: 

I added some shredded Mexican cheese blend to the bowl.

Then I mixed the cheese into the meat mixture.

 STEP 5: 

Then I lined a 9 x 5 inch loaf pan with aluminum foil.

I sprayed the foil with cooking spray.

Then I pressed the meat mixture into the pan.

 STEP 6: 

I poured some salsa on top of the meat mixture.

I spread the salsa out evenly to cover all of the meat.

 STEP 7: 

I placed the loaf pan in the oven and baked the meatloaf for forty minutes.

After forty minutes I removed the loaf pan from the oven.

I sprinkled some shredded Mexican cheese blend on top of the salsa.

 STEP 8: 

Then I returned the loaf pan to the oven and continued cooking the meatloaf until the cheese was completely melted and the meatloaf had reached an internal temperature of 160F.

I removed the pan from the oven and allowed the meatloaf to rest for five minutes.

Then I used the foil to lift the meatloaf out of the pan.

Instructions

  1. Preheat oven to 350F.

  5. Add 1/2 cup of the salsa to the bowl.
  6. Add the taco seasoning, salt, pepper and garlic powder to the bowl.
  7. Use your hands to combine all of the ingredients well.
  8. Add 1 cup of the shredded cheese to the bowl.
  9. Mix the cheese into the meat mixture.
  10. Line a 9 x 5 inch loaf pan with aluminum foil and spray it with cooking spray.
  11. Press the meat mixture into the loaf pan.
  12. Spoon the remaining 1 cup of salsa on top of the meat mixture and spread it out evenly.
  13. Place the loaf pan in the oven and bake the meatloaf for 40 minutes.
  14. After 40 minutes remove the pan from the oven and sprinkle the remaining 1 cup of shredded cheese on top of the meatloaf.
  15. Return the pan to the oven and continue baking the meatloaf for 10 - 15 minutes or until it reaches an internal temperature of 160F.
  16. Remove the meatloaf from the oven and allow it to rest for 5 minutes.
  17. Use the foil to lift the meatloaf from the pan.
  18. Slice and serve.
