To make these banana oatmeal cookies, I started by dumping some softened butter, eggs, vanilla extract and ripe bananas into a large mixing bowl.

I used an electric mixer to cream the ingredients together until no large lumps remained.

Then I added some granulated sugar, brown sugar, quick oats, baking powder and salt to the bowl.

I continued mixing with the electric mixer until the ingredients were fully combined.

Then I added some milk chocolate chips to the bowl.

I used a rubber spatula to stir the chocolate chips into the cookie dough.

Then I scooped the cookie dough into balls approximately one inch in diameter and dropped them onto a non stick baking sheet.

I used a fork to flatten the balls of cookie dough.

Then I placed the cookie sheet in the oven and baked the cookies until they were starting to brown around the edges.

I left the cookies to cool on the baking sheet for a few minutes and then used a spatula to transfer them to some parchment paper on the counter to finish cooling of.

Ingredients

  • 1/2 cup butter, softened
  • 2 eggs, large
  • 2 bananas, very ripe
  • 2 tsp vanilla extract
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 4 cups quick oats
  • 1 tsp baking powder
  • 1 tsp salt
  • 2 cups milk chocolate chips

Instructions

  1. Preheat oven to 350F.
  2. Dump softened butter, eggs, ripe bananas and vanilla extract into a large mixing bowl.
  3. Use an electric mixer to cream the ingredients together until no large lumps remain.
  4. Add the granulated sugar, brown sugar, quick oats, baking powder and salt to the bowl.
  5. Continue mixing with the electric mixer until ingredients are fully combined.
  6. Add the milk chocolate chips to the bowl.
  7. Use a rubber spatula to stir the chocolate chips into the cookie dough.
  8. Scoop the cookie dough into balls approximately 1 1/2 inches in diameter and drop them onto a non stick baking sheet.
  9. Flatten the cookie dough balls with a fork.
  10. Place the cookie sheet in the oven and bake the cookies until they are starting to brown around the edges. 9-11 minutes.
  11. Remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to some parchment paper on the counter to finish cooling off.
  12. Serve and enjoy!
