To make these banana oatmeal cookies, I started by dumping some softened butter, eggs, vanilla extract and ripe bananas into a large mixing bowl.
I used an electric mixer to cream the ingredients together until no large lumps remained.
Then I added some granulated sugar, brown sugar, quick oats, baking powder and salt to the bowl.
I continued mixing with the electric mixer until the ingredients were fully combined.
Then I added some milk chocolate chips to the bowl.
I used a rubber spatula to stir the chocolate chips into the cookie dough.
Then I scooped the cookie dough into balls approximately one inch in diameter and dropped them onto a non stick baking sheet.
I used a fork to flatten the balls of cookie dough.
Then I placed the cookie sheet in the oven and baked the cookies until they were starting to brown around the edges.
I left the cookies to cool on the baking sheet for a few minutes and then used a spatula to transfer them to some parchment paper on the counter to finish cooling of.

Ingredients
- 1/2 cup butter, softened
- 2 eggs, large
- 2 bananas, very ripe
- 2 tsp vanilla extract
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 4 cups quick oats
- 1 tsp baking powder
- 1 tsp salt
- 2 cups milk chocolate chips
Instructions
- Preheat oven to 350F.
- Dump softened butter, eggs, ripe bananas and vanilla extract into a large mixing bowl.
- Use an electric mixer to cream the ingredients together until no large lumps remain.
- Add the granulated sugar, brown sugar, quick oats, baking powder and salt to the bowl.
- Continue mixing with the electric mixer until ingredients are fully combined.
- Add the milk chocolate chips to the bowl.
- Use a rubber spatula to stir the chocolate chips into the cookie dough.
- Scoop the cookie dough into balls approximately 1 1/2 inches in diameter and drop them onto a non stick baking sheet.
- Flatten the cookie dough balls with a fork.
- Place the cookie sheet in the oven and bake the cookies until they are starting to brown around the edges. 9-11 minutes.
- Remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to some parchment paper on the counter to finish cooling off.
- Serve and enjoy!
