This slow cooker beef taco soup is packed with flavour and can be topped with crumbled tortilla chips, shredded cheese and chopped green onions.

To make this taco soup, I started by dumping some lean ground beef into a large saute pan over medium-high heat.
I added some diced yellow onions to the pan with the ground beef.
I crumbled the ground beef well and cooked it for about 4 minutes, until it was mostly browned but not fully cooked.
Then I drained the grease from the pan.
I dumped the ground beef and onions into the bottom of my Crock Pot.
Then I added some chicken broth to the Crock Pot.
I also added two cans of Rotel diced tomatoes and green chilies, a can of tomato sauce and can of corn to the pot.
Then I added some taco seasoning, salt, pepper, onion powder and garlic powder to the pot.
I stirred all of the ingredients together well.
Then I placed the lid on the Crock Pot and cooked the soup on low for 4 hours.
After 4 hours I removed the lid from the pot.
I stirred the soup well.
Then I added some chopped green onions to the pot.
I stirred the green onions into the soup.
Then the beef taco soup was ready to serve.
I scooped the soup into bowls and sprinkled some crumbled tortilla chips, shredded cheddar cheese and chopped green onions on top.
