This easy soup recipe takes less than forty minutes to make and serves four people as a main dish.

To make this cheesy broccoli soup, I started by chopping some boneless, skinless chicken thighs into bite sized chunks.

Then I poured some condensed chicken broth and water into my Instant Pot.

I added the chicken thigh chunks to the pot.

Then I dumped some diced yellow onion on top of the chicken.

I poured some cream of chicken soup and cheddar soup into the pot next.

Then I dumped some frozen broccoli florets on top.

I placed the lid on the Instant Pot, turned the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 12 minutes.

When the Instant Pot was finished cooking, I left it to natural release for 5 minutes.

Then I turned the steam release handle to the venting position and finished with a quick release.

I removed the lid and stirred the contents well.

Then I added some heavy cream, salt, pepper, onion powder and garlic powder to the pot.

I stirred well and then added some shredded cheddar cheese to the pot.

I stirred just until the cheese was melted and then the soup was ready to serve.

Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 10.5 oz condensed chicken broth
  • 1 ½ cups water
  • 1 cup yellow onion, diced
  • 10.5 oz condensed cream of chicken soup
  • 10.5 oz condensed cheddar cheese soup
  • 4 cups broccoli florets, frozen
  • 2 cups heavy cream
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 3 cups shredded cheddar cheese blend

Instructions

  1. Cut chicken thighs into bite sized chunks.
  2. Pour chicken broth and water into Instant Pot.
  3. Add the chicken chunks to the pot.
  4. Dump the diced onions on top of the chicken.
  5. Pour the cream of chicken soup and cheddar cheese soup in next.
  6. Dump the frozen broccoli florets on top.
  7. Do not stir!
  8. Place the lid on the Instant Pot, turn the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 12 minutes.
  9. When the Instant Pot is done cooking, leave it to natural release for 5 minutes.
  10. After 5 minutes, turn the steam release handle to the venting position and finish with a quick release.
  11. Remove the lid and stir the contents.
  12. Add the heavy cream, salt, pepper, onion powder and garlic powder to the pot.
  13. Stir well.
  14. Add the shredded cheddar cheese to the pot and stir just until melted.
  15. Sprinkle more shredded cheese on top when serving if desired.
  16. Enjoy!
