To make this sweet chili chicken salad, I started by pouring some condensed chicken broth and water into my Instant Pot.
Then I added some BBQ chicken seasoning to the pot and stirred well.
I added some boneless, skinless chicken breasts to the pot.
Then I placed the lid on the Instant Pot, turned the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 12 minutes.
When the Instant Pot was done cooking, I left it to natural release for 5 minutes.
After 5 minutes, I turned the steam release handle to the venting position and finished with a quick release.
I removed the cooked chicken breasts from the Instant Pot and placed them on a cutting board.
Then I used two forks to shred the chicken breasts.
I left the shredded chicken to cool off before continuing to prepare the chicken salad.
Once the chicken had cooled off, I dumped it into a medium mixing bowl.
Then I added some mayo, Thai sweet chili sauce, salt, pepper and onion powder to the bowl.
I stirred until all of the ingredients were well combined.
Then I added some chopped green onions, crumbled bacon and shredded mozzarella and cheddar cheese to the bowl.
I stirred well again.
Then I scooped the chicken salad mixture onto some brioche buns.
I spread the top buns with some guacamole before placing them on the sandwiches.
These chicken salad sandwiches are packed with flavour.

Ingredients
- 10.5 oz condensed chicken broth
- 1 cup water
- 2 tsp BBQ chicken seasoning
- 1 lb boneless, skinless chicken breasts
- 1 cup mayo
- 1/3 cup sweet Thai chili sauce
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tbsp onion powder
- 1 bunch green onions, chopped
- 1/2 cup real bacon bits
- 1 cup shredded mozzarella and cheddar cheese blend
- 4 brioche buns
- 1/2 cup guacamole
Instructions
- Pour the condensed chicken broth and water into the Instant Pot.
- Add the BBQ chicken seasoning to the pot and stir well.
- Place the chicken breasts in the pot.
- Place the lid on the Instant Pot, turn the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 12 minutes.
- When the Instant Pot is done cooking, leave it to natural release for 5 minutes.
- After 5 minutes, turn the steam release handle to the venting position and finish with a quick release.
- Remove the cooked chicken breasts from the pot and place the on a cutting board.
- Use two forks to shred the chicken.
- Allow the chicken to cool off before continuing.
- Once the chicken has cooled off, dump it into a medium mixing bowl.
- Add the mayo, sweet chili sauce, salt, pepper and onion powder to the bowl. Stir well.
- Add the chopped green onions, bacon bits and shredded cheese to the bowl. Stir well again.
- Spoon the chicken salad onto the brioche buns.
- Spread guacamole on the top buns before placing them on the sandwiches.
- Serve and enjoy!
