This grilled cheese sandwich is filled with a combination of shredded mozzarella and parmesan cheese.
This basil pesto grilled cheese recipe takes about 15 minutes from start to finish.
To make this basil pesto grilled cheese, I started by dumping some shredded mozzarella and parmesan cheeses into a mixing bowl.
I added some basil pesto to the bowl.
I stirred until all of the ingredients were combined.
Then I spread softened butter onto four slices of bread.
I flipped two of the slices of bread over so that they were butter side down.
I divided the pesto and cheese mixture evenly between the two slices of bread.
Then I placed the remaining two slices of bread, butter side up, on top of the cheese to form two sandwiches.
I placed the sandwiches in a large saute pan over low heat.
When the bottoms were golden brown I flipped the sandwiches.
I continued cooking the sandwiches until both sides were nicely browned.
Then I removed the pan from the heat.
I served the sandwiches immediately so that the cheese would be nice and gooey.
