To make this soup, I started by chopping some onion, celery and carrots and rinsing some brown lentils.

I heated some olive oil in a large pot over medium-high heat.

I added the diced onions to the pot.

I cooked the onions for a few minutes until they started to soften.

 

I added the diced celery, chopped carrots and minced garlic to the pot.

I stirred well and continued cooking for 3-4 minutes.

I pushed all the veggies to the sides of the pot.

I added the ground turkey to the center of the pot.

I crumbled the turkey well as it cooked.

I continued cooking until the ground turkey was fully browned.

I added some Italian seasoning, paprika, pepper and kosher salt.

I added the rinsed brown lentils to the pot.

I also added some chicken stock to the pot.

I stirred all of the ingredients together well and brought the soup to a simmer.

 

I left the soup to simmer for about thirty minutes, stirring occasionally.

Once the lentils were tender I added some fresh lemon juice to the pot.

Ingredients You’ll Need to Make This Turkey Lentil Soup:

  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 2 stalks celery, diced
  • 3 large carrots, peeled and chopped
  • 2 cloves garlic, minced
  • 1 pound lean ground turkey (I used 93/7)
  • ½ teaspoon kosher salt, plus more to taste
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ¼ teaspoon fresh ground pepper
  • 1 cup brown lentils, rinsed
  • 1 (14.5 ounce) can petite diced tomatoes
  • 4 cups chicken stock
  • 1 tablespoon fresh lemon juice

How to Make Turkey Lentil Soup:

  1. Prepare the ingredients. Dice the onion and celery. Peel and chop the carrot. Mince the garlic. Rinse the lentils and set aside.
  2. Warm the olive oil in a large soup pot over medium-high heat. Add the diced onion, and sauté 3-4 minutes, until the onion is just starting to soften.
  3. Add the celery, carrot and minced garlic, and cook the vegetables another 3-4 minutes.
  4. Move the vegetables to the side of the pot, and add the lean ground turkey. Cook the turkey until fully browned, using a wooden spatula to break it apart as it cooks. Add the Italian seasoning, paprika, pepper, and ½ teaspoon kosher salt.
  5. Add the rinsed lentils, diced tomatoes, and chicken stock to the pot. Stir everything well, and bring the soup to a simmer.
  6. Allow the soup to simmer lightly for about 25-35 minutes, until the lentils are tender. Stir the soup occasionally to prevent anything from sticking to the bottom of the pot.
  7. When the lentils are tender, add fresh lemon juice. Taste the soup, and season with additional salt and pepper, to taste. Garnish with fresh herbs, if desired.
  8. Serve and enjoy!

Notes

  • For a quick-cooking soup on a busy weeknight, substitute fully-cooked, canned brown lentils. This brings the simmer time of the soup to only about 10 minutes, for a full meal on the table in under 30 minutes.
  • Store leftover soup in an airtight container in the refrigerator for 3-4 days. The lentils may continue to absorb broth, so you may want to add a little additional broth to the soup before reheating.
  • Feel free to substitute any of your favorite veggies in this soup. Green beans, kale, spinach, zucchini or yellow squash would all be yummy choices!
  • IMPORTANT: I used lean ground turkey, so I did not need to drain any fat from the pot after cooking the meat. If you are using a meat with more fat, I would suggest removing the veggies from the pot after step 2, browning the meat as directed in step 3, draining the fat, and then adding the seasoning and returning the veggies to the pot.
