To make this sausage tortellini soup, I started by cooking some sliced sausage and mushrooms in a large pot.
Once the sausage slices and mushrooms were nicely browned, I transferred them to a bowl.
Then I added some butter, minced garlic and diced onions to the same pot.
I stirred well and cooked until the onions were softened.
I added some flour to the pot.
I cooked the flour for one minute while stirring continuously.
Then I added some chicken broth to the pot and whisked well.
I brought the mixture to a simmer and then immediately reduced the heat.
I added two cans of cream of mushroom soup to the pot.
I also filled the empty cans with milk and added the milk to the pot.
I stirred until fully combined.
I added the cooked sausage and mushrooms to the pot.
I also added some tortellini, carrots, spinach, parsley, Italian seasoning, pepper and parmesan to the pot.
I stirred well and cooked for about 5 minutes to soften the tortellini.
Then the creamy tortellini soup was ready to serve.
I ladled my sausage tortellini soup into bowls and garnished it with fresh parsley.

- 2 10&½ oz cans of condensed cream of mushroom soup
- 2 empty cans filled with milk
- 2 tsp dried parsley
- 2 tsp of dried italian seasoning
- ½ tsp black pepper
- ¼ cup of parmesan
- 1 15oz can of carrots
- 4-5 oz of spinach. About half a bag.
- 1.5lb of refrigerated tortellini ( I used costco 4 cheese)
- Garnish with fresh parsley
How to Make Creamy Tortellini Soup with Sausage:
- In a large pot cook the sausage and mushrooms over medium heat until brown. Transfer to another bowl.
- In the same pan add the butter, onions and garlic. Cook over a medium heat until softened. Keep stirring to prevent garlic from burning.
- Add flour and cook for 1 min stirring continuously .Slowly add chicken stock and whisk until the flour is combined. Turn up the heat until the mixture reaches a simmer then lower it to medium/low simmer and cook for 3-4 min.
- Add the cans of cream of mushroom soup. Fill the cans with milk and add them to the soup. Stir together until well combined.
- Add back the sausage and mushrooms along with the tortellini, carrots, spinach, parsley, Italian seasoning, black pepper, parmesan and cook for 5 min or until tortellini is soft.
- Garnish with fresh parsley.
