This recipe produces 36 cookies  but can easily be doubled if you are feeding a crowd.

To make these Monster Cookies, I started by dumping some smooth peanut butter, softened butter, eggs, granulated sugar, light brown sugar and vanilla extract into a large mixing bowl.

I used an electric mixer to cream the ingredients together until smooth.

Then I added some quick oats, baking powder, salt and cocoa powder to the bowl.

I continued mixing with the electric mixer until all of the ingredients were fully combined.

Then I added some mini M&M's to the bowl.

I used a rubber spatula to stir the M&M's into the cookie dough.

Then I scooped the cooked dough in balls approximately one and a half inches in diameter and dropped them onto a non stick baking sheet.

I left about two inches between the balls of cookie dough.

I baked the cookies until the edges were starting to darken slightly.

Then I removed the baking sheet from the oven and allowed the cookies to cool on the pan for a few minutes.

After a few minutes I used a spatula to transfer the cookies to some parchment paper on the counter to finish cooling off.

Ingredients

  • ¾ cup smooth peanut butter
  • ½ cup salted butter, softened
  • 2 eggs, large
  • ½ cup granulated sugar
  • ½ cup light brown sugar
  • 2 teaspoon vanilla extract
  • 2 ½ cups quick oats
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 3 tablespoon cocoa powder
  • 1 ½ cups mini M&M's

Instructions

  1. Preheat oven to 350F.
  2. Dump peanut butter, softened butter, eggs, granulated sugar, brown sugar and vanilla extract into a large mixing bowl.
  3. Use an electric mixer to cream the ingredients together until smooth.
  4. Add quick oats, baking powder, salt and cocoa powder to the bowl.
  5. Continue mixing with the electric mixer until all of the ingredients are fully combined.
  6. Add mini M&M's to the bowl.
  7. Use a rubber spatula to stir the M&M's into the cookie dough.
  8. Scoop the cookie dough into balls approximately one and a half inches in diameter and drop them onto a non stick baking sheet.
  9. Leave at least two inches between the balls of cookie dough.
  10. Place the baking sheet in the oven and bake the cookies until they are starting to darken around the edges. 9-11 minutes.
  11. Remove the baking sheet from the oven and allow the cookies to cool on the pan for a few minutes.
  12. After a few minutes use a spatula to transfer the cookies to some parchment paper on the counter to finish cooling off.
  13. Serve and enjoy!
