To make these monster cookie muffins, I started by dumping some peanut butter, eggs and milk into a large mixing bowl.
I used an electric mixer to combine the ingredients until smooth.
Then I added some yellow cake mix and quick oats to the bowl.
I continued mixing with the electric mixer until the ingredients were fully combined.
Then I added some mini M&Ms to the bowl and used a rubber spatula to stir them into the muffin batter.
I spooned the peanut butter oatmeal muffin batter into greased muffin tins, filling each cup about 2/3 of the way.
Then I baked the muffins until a toothpick inserted in the center of a muffin came up clean.
I allowed the muffins to cool for a few minutes before removing them from the muffin tins.

Monster Cookie Muffins

Ingredients
- 1 cup smooth peanut butter
- 3 eggs, large
- 1 cup milk
- 15.25 oz box yellow cake mix
- 2 cups quick oats
- 1 cup mini M&Ms
Instructions
- Preheat oven to 375F.
- Dump the peanut butter, eggs and milk into a large mixing bowl.
- Use an electric mixer to combine the ingredients until smooth.
- Add the cake mix and quick oats to the bowl and continue mixing with the electric mixer until fully combined.
- Add the mini M&Ms to the bowl and stir them into the batter with a rubber spatula.
- Spoon the muffin batter into greased muffin tins, filling each cup about 2/3 of the way.
- Bake the muffins until a toothpick inserted in the center comes up clean. 14-16 minutes.
- Allow the muffins to cool for a few minutes before removing them from the muffin tins.
- Serve and enjoy!
