To make this dill pickle pasta salad, I started by cooking some orecchiette noodles according to the directions on the package.

Then I drained the pasta and and rinsed it with cold water to cool it down.

Once the pasta was cold, I gently patted it dry with some paper towel to soak up the remaining water.

I transferred the pasta to a large mixing bowl.

Then I added some mayo and ranch dressing to the bowl.

I also added some salt, pepper, garlic powder and onion powder to the bowl.

I stirred until all of the noodles were coated in dressing.

Then I added some diced onion, diced dill pickle, shredded chicken, shredded mozzarella and cheddar blend and chopped chives to the bowl.

I stirred until all of the ingredients were fully combined.

This pasta salad can be served immediately but I like to refrigerate it for at least a couple of hours to give the pasta time to absorb all the flavours.

Ingredients

  • 1 lb orecchiette pasta (or your favourite pasta)
  • 1 cup mayo
  • 1 cup ranch dressing
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 cup diced yellow onion
  • 1 1/2 cups diced dill pickles
  • 2 cups cooked, shredded chicken
  • 2 cups shredded mozzarella and cheddar cheese blend
  • 1 tbsp chopped chives

Instructions

  1. Cook pasta according to the directions on the package.
  2. Drain the pasta and rinse under cold water to cool it off.
  3. Once the pasta is cold, gently pat it dry with paper towel to soak up any remaining water.
  4. Transfer the pasta to a large mixing bowl.
  5. Add the mayo, ranch dressing, salt, pepper, garlic powder and onion powder to the bowl.
  6. Stir until all of the pasta is coated in dressing.
  7. Add the diced onion, diced pickles, shredded chicken, shredded cheese and chopped chives to the bowl.
  8. Stir until all of the ingredients are fully combined.
  9. Serve immediately or store in the refrigerator.
