Pasta salad is one of my favourite side dishes but I don’t like most of those boring premade ones from the grocery store.

Sweet Chili Bacon Pasta Salad is an easy macaroni salad recipe loaded with bacon, chopped green onions, diced red peppers and slivered almonds all tossed in mayo and Thai sweet chili sauce.

For this pasta salad I wanted to use bacon ( because everything is better with bacon!) and Sweet Chili Thai sauce because I love that sweet heat.

To make my salad I started by boiling some macaroni.

Once the macaroni was cooked I drained it and rinsed it with cold water to cool it off.

I left the macaroni to dry a bit while I chopped some red peppers, green onions and yellow onions.

In a large mixing bowl I combined the macaroni with the chopped vegetables, some real bacon bits and slivered almonds.

I added some mayo and sweet chili sauce, salt and pepper and stirred it all together really well.

I covered the bowl and put the macaroni salad in the fridge to chill for two hours before serving so that the macaroni had time to really absorb all the flavours.

My family loves this macaroni salad and I have made it twice this month. The first time I made it, my husband did the shopping, and bought Hickory Smoke bacon bites and I didn’t like it. The next time I made it I doubled the recipe and skipped the bacon bites.

If the bacon is important to you, I would suggest you fry your own bacon or find real bacon bites.

Make it, is delicious!
