This macaroni salad is loaded with bacon and tossed with a sweet and spicy sauce.

Pasta salad is one of my favourite side dishes but I don’t like most of those boring premade ones from the grocery store.
For this pasta salad I wanted to use bacon ( because everything is better with bacon!) and Sweet Chili Thai sauce because I love that sweet heat.
To make my salad I started by boiling some macaroni.
Once the macaroni was cooked I drained it and rinsed it with cold water to cool it off.
I left the macaroni to dry a bit while I chopped some red peppers, green onions and yellow onions.
In a large mixing bowl I combined the macaroni with the chopped vegetables, some real bacon bits and slivered almonds.
I added some mayo and sweet chili sauce, salt and pepper and stirred it all together really well.
I covered the bowl and put the macaroni salad in the fridge to chill for two hours before serving so that the macaroni had time to really absorb all the flavours.

Sweet Chili Bacon Pasta Salad

Ingredients
- 12 oz macaroni noodles, uncooked
- 1 cup red peppers, diced
- 1/2 cup yellow onion, diced
- 1 bunch green onions, chopped
- 3.5 oz slivered almonds
- 1 cup real bacon bits
- 1 cup mayo
- 1/2 cup sweet chili sauce
- 1/2 tsp salt
- 1/2 tsp pepper
Instructions
- Bring a large pot of water to a boil and cook macaroni according to instructions on the package.
- Drain the cooked macaroni and rinse with cold water to cool it off. After rinsing, shake the strainer a bit to get as much water off the macaroni as you can.
- In a large mixing bowl combine the macaroni with the diced red peppers, yellow onions, green onions, bacon bits and almonds.
- Add in the mayo, sweet chili sauce, salt and pepper. Stir well until everything is coated in the dressing.
- Cover the bowl and refrigerate for at least an hour before serving.
- Serve and enjoy!
