To make this macaroni salad, I started by cooking some tubetti pasta according to the directions on the package.

Once the noodles were cooked, I drained them and ran them under cold water to cool them down.

When the noodles were cold, I gently dabbed them with paper towel to soak up any remaining water.

Then I dumped the cold noodles into a large mixing bowl.

I added some mayo to the bowl.

Then I added some salt, pepper and Cajun seasoning to the bowl.

I stirred until all of the noodles were coated in the mayo and spices.

Then I added some drained canned corn, diced red onions and crumbled bacon to the bowl.

I stirred until all of the ingredients were fully combined.

Then I added some shredded mozzarella and cheddar cheese to the bowl along with some chopped chives.

I stirred well again.

Then I covered the bowl and placed it in the refrigerator for couple of hours before serving so that the noodles could really absorb all the flavours.

  • 1 lb tubetti pasta (or macaroni)
  • 1 1/2 cups mayo
  • 1 1/2 tsp salt
  • 1 1/2 tsp pepper
  • 2 tbsp Cajun seasoning
  • 15 oz canned corn, drained
  • 1 cup diced red onion
  • 1/2 cup real bacon bits

  • 2 tbsp chopped chives

How to Make Cajun Macaroni Salad:

  1. Cook pasta according to directions on the package.
  2. Drain and rinse pasta with cold water to cool it down.

  4. Pour the cold pasta into a large mixing bowl.
  5. Add the mayo, salt, pepper and Cajun seasoning to the mixing bowl.
  6. Stir until the noodles are all coated in the mayo.

  9. Add the shredded cheese and chopped chives to the bowl.
  10. Stir well again.
  11. This macaroni salad can be served immediately but I prefer to refrigerate it for at least a couple of hours before serving to give the noodles time to absorb all the flavours.
