This delicious pasta recipe takes less than forty minutes from start to finish and serves four people.

To make this dill pickle chicken pasta, I started by chopping some boneless, skinless chicken thighs into bite sized pieces.

Then I set my Instant Pot to Saute Less for seven minutes.

I added a dab of margarine to the Instant Pot and then added the chunks of chicken.

I left the chicken to cook, stirring occasionally.

When the Instant Pot turned off the chicken was still slightly pink.

I added some water, condensed chicken broth and dill pickle juice to the pot.

Then I added some cavatappi noodles and spread them out evenly.

I placed the lid on the Instant Pot, turned the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 3 minutes.

When the Instant Pot was finished cooking, I immediately turned the steam release handle to the venting position and did a quick release.

I removed the lid and stirred the contents well.

Then I added some heavy cream, butter and ranch dressing to the pot.

I stirred until the butter was melted.

Then I added some diced dill pickles, crumbled bacon, salt and pepper to the pot.

I stirred again and then added some shredded mozzarella and cheddar cheese to the pot.

I stirred until the cheese was melted and then the pasta was ready to serve.

Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 2 cups water
  • 10.5 oz condensed chicken broth
  • 1/2 cup dill pickle juice
  • 4 cups cavatappi pasta
  • 1 cup heavy cream
  • 1/4 cup butter
  • 1/2 cup ranch dressing
  • 1 cup diced dill pickles
  • 1/2 cup bacon crumble
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 cups shredded mozzarella and cheddar cheese blend

Instructions

  1. Cut chicken thighs into bite sized pieces.
  2. Set Instant Pot to Saute Less for 7 minutes and add a dab of margarine or butter to the pot.
  3. Add the pieces of chicken to the pot.
  4. Leave the chicken to cook, stirring occasionally.
  5. When the Instant Pot turns off the chicken will still be slightly pink.
  6. Pour the water, condensed chicken broth and dill pickle juice to the pot.
  7. Add the cavatappi noodles to the pot and spread them out evenly.
  8. Place the lid on the Instant Pot, turn the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 3 minutes.
  9. When the Instant Pot is done cooking, immediately turn the steam release handle to the venting position and do a quick release.
  10. Remove the lid and stir the contents well.
  11. Add the heavy cream, butter and ranch dressing to the pot.
  12. Stir until the butter is melted.
  13. Add the diced dill pickles, bacon crumble, salt and pepper to the pot.
  14. Stir well.
  15. Add the shredded cheese to the pot and stir again.
  16. Serve and enjoy!
