This delicious pasta recipe takes less than forty minutes from start to finish and serves four people.
To make this dill pickle chicken pasta, I started by chopping some boneless, skinless chicken thighs into bite sized pieces.
Then I set my Instant Pot to Saute Less for seven minutes.
I added a dab of margarine to the Instant Pot and then added the chunks of chicken.
I left the chicken to cook, stirring occasionally.
When the Instant Pot turned off the chicken was still slightly pink.
I added some water, condensed chicken broth and dill pickle juice to the pot.
Then I added some cavatappi noodles and spread them out evenly.
I placed the lid on the Instant Pot, turned the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 3 minutes.
When the Instant Pot was finished cooking, I immediately turned the steam release handle to the venting position and did a quick release.
I removed the lid and stirred the contents well.
Then I added some heavy cream, butter and ranch dressing to the pot.
I stirred until the butter was melted.
Then I added some diced dill pickles, crumbled bacon, salt and pepper to the pot.
I stirred again and then added some shredded mozzarella and cheddar cheese to the pot.
I stirred until the cheese was melted and then the pasta was ready to serve.

Ingredients
- 1 lb boneless, skinless chicken thighs
- 2 cups water
- 10.5 oz condensed chicken broth
- 1/2 cup dill pickle juice
- 4 cups cavatappi pasta
- 1 cup heavy cream
- 1/4 cup butter
- 1/2 cup ranch dressing
- 1 cup diced dill pickles
- 1/2 cup bacon crumble
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 cups shredded mozzarella and cheddar cheese blend
Instructions
- Cut chicken thighs into bite sized pieces.
- Set Instant Pot to Saute Less for 7 minutes and add a dab of margarine or butter to the pot.
- Add the pieces of chicken to the pot.
- Leave the chicken to cook, stirring occasionally.
- When the Instant Pot turns off the chicken will still be slightly pink.
- Pour the water, condensed chicken broth and dill pickle juice to the pot.
- Add the cavatappi noodles to the pot and spread them out evenly.
- Place the lid on the Instant Pot, turn the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 3 minutes.
- When the Instant Pot is done cooking, immediately turn the steam release handle to the venting position and do a quick release.
- Remove the lid and stir the contents well.
- Add the heavy cream, butter and ranch dressing to the pot.
- Stir until the butter is melted.
- Add the diced dill pickles, bacon crumble, salt and pepper to the pot.
- Stir well.
- Add the shredded cheese to the pot and stir again.
- Serve and enjoy!
