To make this tangy lemon treat, I started by dumping some fresh blueberries into a bowl.

I sprinkled some flour over the berries to coat them.

I added some oil and eggs to the bowl and whisked the ingredients together.

Then I whisked in some Greek yogurt, lemon juice and vanilla extract.

I whisked some flour, salt and baking powder together and added them to the bowl with the wet ingredients.

I stirred until all of the ingredients were combined.

I added the blueberries to the bowl and gently folded them into the batter.

I poured the batter into a parchment lined loaf pan.

I placed the pan in the oven and baked the loaf until it was golden brown on top.

Ingredients You’ll Need to Make Lemon Blueberry Loaf:

  • 1 Tablespoon of Flour to coat Blueberries
  • 1 Cup Granulated Sugar
  • 2 Tablespoons Lemon Zest
  • 3 Large Eggs
  • ½ Cup of Vegetable Oil

How to Make Lemon Blueberry Loaf:

  1. Preheat oven to 350 degrees and spray a 9 X 5 loaf pan with baking spray or line with parchment paper.
  2. In a small bowl add the blueberries and sprinkle a Tablespoon of flour to coat berries.
  3. In a small bowl add the lemon zest and the sugar and mix together until they are combined.
  4. In a large bowl add the sugar zest mixture, 3 eggs and oil, then whisk in yogurt, lemon juice and vanilla extract.
  5. Sift the flour, salt and baking powder together and add to the wet ingredients.
  6. Mix together. But don’t overmix.
  7. Gently Fold in the Blueberries.
  8. Pour the batter into prepared loaf pan.
  9. Bake for approximately 50 minutes or until top is light golden brown.
  10. Let the loaf cool in the pan for 10-15 minutes then remove from the pan onto a wire rack.
  11. As the bread is cooling mix the powdered sugar, lemon juice and heavy cream into a small bowl.
  12. Once the bread has cooled, drizzle glaze over the loaf with a spoon or piping bag.
  13. Place the loaf in the refrigerator to let the glaze set.
  14. Slice, serve and enjoy!

Can I use Frozen Blueberries?
I would not use frozen blueberries, because of the water content in them. It will be hard to coat with flour if they are wet.


Do I have to coat the blueberries with flour?
The flour makes the blueberries stay in place and not sink to the bottom of pan during baking.


Can I use a different oil than vegetable oil?
Yes, you can use any neutral flavor oil you desire.


If I don’t have Greek Yogurt can I use Sour Cream?
Yes, however its best to use whole sour cream rather than non fat.

  • Make sure the loaf has cooled before you glaze. Set the loaf into the refrigerator after glazing to set.
  • You can serve this without the glaze and it will be delicious.
  • Make sure you coat the blueberries with flour so they don’t sink to the bottom of the pan.
  • You can store the loaf into a sealed container for up to 3 days safely.
