One Pot Chicken Noodle Casserole is an easy chicken dinner recipe perfect for weeknights.
This stove top casserole recipe using shredded rotisserie chicken is creamy and cheesy and the Wonton strips on top give the dish a nice crunch.
This chicken noodle casserole takes about thirty minutes from start to finish and serves four people.

To make this stove top chicken casserole, I started by dumping some water and condensed chicken broth into a 5 quart pot on the stove.
I brought the liquid to a boil and then added some egg noodles to the pot.
I spread the noodles out evenly so that the were all submerged in the liquid and then covered the pot and reduced the heat to medium.
I left the noodles to cook for five minutes.
After five minutes, I removed the lid from the pot and stirred the noodles well.
Then I added some condensed cream of chicken soup to the pot.
I stirred until all of the noodles were coated in the soup.
Then I added some salt, pepper, onion powder and garlic powder to pot.
I stirred well again.
I added some canned corn, peas, carrots and shredded rotisserie chicken to the pot.
I stirred until all of the ingredients were fully combined.
I left the noodle dish to continue cooking over medium heat for four minutes.
After four minutes, I reduced the heat to low and added some shredded mozzarella and cheddar cheese to the pot.
I stirred until the cheese was melted.
I sprinkled some more shredded mozzarella and cheddar cheese evenly over the noodles and did not stir this time.
Then I sprinkled some crispy fried Wonton strips on top of the cheese.
I waited a few minutes for the cheese on top to melt and then the casserole was ready to serve.

One Pot Chicken Noodle Casserole

Ingredients
- 3 cups water
- 10.5 oz condensed chicken broth
- 4 cups egg noodles
- 10.5 oz condensed cream of chicken soup
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1 tsp salt
- 1 tsp pepper
- 8.5 oz canned peas and carrots, drained
- 8.75 oz canned corn, drained
- 2 cups chicken, cooked and shredded
- 1 cup shredded mozzarella and cheddar cheese blend
Topping
- 1 cup shredded mozzarella and cheddar cheese blend
- 1 cup crispy fried Wonton strips
Instructions
- Dump water and condensed chicken broth into a 5 quart pot and bring to a boil.
- Once the liquid is boiling, add the egg noodles to the pot.
- Spread the egg noodles out evenly so that they are all submerged in the liquid.
- Place a lid on the pot and reduce the heat to medium.
- Leave the noodles to cook for 5 minutes.
- After 5 minutes, remove the lid from the pot and stir the noodles.
- Add the cream of chicken soup to the pot and stir until all of the noodles are coated in the soup.
- Add the onion powder, garlic powder, salt and pepper to the pot. Stir well.
- Add the peas, carrots, corn and shredded chicken to the pot. Stir well again.
- Leave the dish to continue cooking over medium heat for 4 minutes.
- After 4 minutes reduce the heat to low and add 1 cup of the shredded mozzarella and cheddar cheese to the pot. Stir well.
- Sprinkle the remaining cup of shredded cheese evenly over the noodles and this time do not stir.
- Sprinkle the crispy Wonton strips on top of the cheese.
- Leave the dish to sit for a few minutes to allow the cheese on top to melt.
- Serve and enjoy!
