To make this King Ranch casserole I started by cooking some diced onions and green peppers in a large saute pan over medium-high heat.
Once the onions were translucent, I added some cooked shredded chicken to the pan.
I stirred and then added some chicken taco seasoning to the pan.
I stirred again until all of the chicken was fully coated in the taco seasoning.
Then I added some condensed cream of chicken soup and condensed cream of mushroom soup to the pan.
I stirred until the soups were fully combined with the other ingredients.
Then I added some chopped green chilies and chunky salsa to the pan.
I stirred again and then removed the pan from the heat.
I cut some 6 inch corn tortillas into quarters.
I placed one third of the tortilla quarters in the bottom of a greased 9 x 13 inch pan.
Then I spooned half of the chicken mixture on top the tortillas and spread it out evenly.
I sprinkled some shredded mozzarella and cheddar cheese on top of the chicken mixture.
Then I placed another third of the tortilla quarters on top of the cheese.
I spooned the remaining chicken mixture on top of the tortillas and spread it out evenly.
I sprinkled some more cheese on top of the chicken.
Then I placed the remaining tortilla quarters on top of the cheese.
I sprinkled more cheese on top of the tortillas.
Then I placed the casserole in the oven and baked it until the cheese was just starting to brown and the casserole was bubbling.
I removed the casserole from the oven and allowed it to sit for a couple minutes before slicing and serving.
This cheesy chicken casserole is packed with flavour and a little bit of heat.
