This easy chicken casserole recipe takes forty-five minutes from start to finish and serves six people.

To make this King Ranch casserole I started by cooking some diced onions and green peppers in a large saute pan over medium-high heat.

Once the onions were translucent, I added some cooked shredded chicken to the pan.

I stirred and then added some chicken taco seasoning to the pan.

I stirred again until all of the chicken was fully coated in the taco seasoning.

Then I added some condensed cream of chicken soup and condensed cream of mushroom soup to the pan.

I stirred until the soups were fully combined with the other ingredients.

Then I added some chopped green chilies and chunky salsa to the pan.

I stirred again and then removed the pan from the heat.

I cut some 6 inch corn tortillas into quarters.

I placed one third of the tortilla quarters in the bottom of a greased 9 x 13 inch pan.

Then I spooned half of the chicken mixture on top the tortillas and spread it out evenly.

I sprinkled some shredded mozzarella and cheddar cheese on top of the chicken mixture.

Then I placed another third of the tortilla quarters on top of the cheese.

I spooned the remaining chicken mixture on top of the tortillas and spread it out evenly.

I sprinkled some more cheese on top of the chicken.

Then I placed the remaining tortilla quarters on top of the cheese.

I sprinkled more cheese on top of the tortillas.

Then I placed the casserole in the oven and baked it until the cheese was just starting to brown and the casserole was bubbling.

I removed the casserole from the oven and allowed it to sit for a couple minutes before slicing and serving.

King Ranch Chicken Casserole

King Ranch Chicken Casserole is a creamy chicken casserole loaded with green peppers, chopped green chilies and layers of corn tortillas and cheese.

Ingredients

  • 1 cup yellow onion, diced
  • 1 cup green pepper, diced
  • 2 1/2 cups chicken cooked, shredded
  • 0.85 oz Old El Paso Chicken Taco Seasoning
  • 10.5 oz condensed cream of chicken soup
  • 10.5 oz condensed cream of mushroom soup
  • 4.5 oz chopped green chilies
  • 1/2 cup chunky salsa, medium
  • 12 6-inch corn tortillas, cut into quarters
  • 3 cups shredded mozzarella and cheddar cheese blend

Instructions

  1. Preheat oven to 375F.
  2. Place a large saute pan on medium-high heat and add a dab of margarine or butter to the pan.
  3. Add the diced onions and diced green peppers to the pan.
  4. Cook until the onions are translucent.
  5. Add the shredded chicken to the pan and stir.
  6. Add the taco seasoning and stir until the chicken is completely coated in the seasoning.
  7. Add the cream of cream of chicken soup and cream of mushroom soup and stir well.
  8. Add the chopped green chilies and salsa.
  9. Stir well again and remove the pan from the heat.
  10. Place 1/3 of the tortilla quarters in the bottom of a greased 9 x 13 inch pan.
  11. Spoon half of the chicken mixture on top of the tortillas and spread it out evenly.
  12. Sprinkle 1 cup of the shredded cheese on top of the chicken mixture.
  13. Lay another 1/3 of the tortillas on top of the cheese.
  14. Spread the remaining chicken mixture on top of the tortillas.
  15. Sprinkle another cup of the cheese on top of the chicken mixture.
  16. Lay the remaining tortillas on top of the cheese.
  17. Sprinkle the remaining cup of cheese on top of the tortillas.
  18. Place the dish in the oven and bake until the casserole is bubbling and the cheese is just starting to brown. 22-25 minutes.
  19. Allow the casserole to sit for a few minutes after removing from the oven.
  20. Serve and enjoy!
