To make this casserole, I started by dumping some lean ground beef into a large non stick skillet over medium-high heat.

I crumbled the ground beef well as it cooked.

Once the ground beef was fully cooked I removed the skillet from the heat.

I dumped some condensed cheddar soup into a large mixing bowl.

Then I added some chicken broth to the bowl.

I also added some instant rice to the bowl.

I stirred well.

I added some salsa to the bowl.

I stirred well again.

I added some frozen corn kernel, taco seasoning and ranch dressing mix to the bowl.

I stirred until all of the ingredients were fully combined.

Then I added the cooked ground beef to the bowl.

I also added some chopped green onions and shredded cheese to the bowl.

I stirred all of the ingredients together well.

Then I sprayed a 9 x 13 inch baking dish well with cooking spray.

 

I poured the ground beef and rice mixture into the baking dish and spread it out evenly.

Then I placed the dish in the oven and baked the casserole for forty minutes.

After forty minutes I removed the casserole from the oven.

I sprinkled some shredded cheese and chopped green onions on top.

I returned the casserole to the oven and continued baking until the cheese on top was completely melted and just starting to brown around the edges.

Then I removed the casserole from the oven.

I allowed it to rest for a few minutes.

  • 3 cups chicken broth
  • 3 cups instant rice
  • 2 cups chunky salsa
  • 1 1/2 cups frozen corn
  • 1 oz taco seasoning
  • 1 oz ranch dressing mix
  • 1/2 cup chopped green onions
  • 2 cups shredded Mexican cheese blend

Topping

  • 1 cup shredded Mexican cheese blend
  • 2 tablespoons chopped green onions

How to Make Taco Rice Casserole:

  1. Preheat oven to 400F.

  5. Meanwhile, pour the cheddar soup and chicken broth into a large mixing bowl.
  6. Stir them together well.
  7. Add the rice to the bowl and stir well again.
  8. Add the salsa and stir.
  9. Add the frozen corn, taco seasoning and ranch dressing to the bowl.
  10. Stir well.
  11. Add the cooked ground beef to the bowl.
  12. Add the chopped green onions and shredded cheese to the bowl and stir.
  13. Spray a 9 x 13 inch baking dish well with cooking spray.
  14. Pour the mixture into the baking dish and spread it out well.
  15. Place the dish in the oven and bake for 40 minutes.
  16. After 40 minutes remove the dish from the oven and sprinkle the remaining cheese and chopped green onions on top.
