To make this casserole, I started by dumping some lean ground beef into a large nonstick skillet over medium-high heat.
I crumbled the ground beef well as it cooked.
Once the ground beef was fully cooked, I drained the grease from the pan.
Then I added some chunky salsa, chili seasoning, salt and pepper to the skillet.
I stirred until all of the ingredients were fully combined.
Then I added some canned mixed beans and frozen corn kernels to the skillet.
I stirred well and left the mixture to simmer over medium-low while I prepared the cornbread batter.
I dumped two boxes of Jiffy cornbread mix into a mixing bowl.
I added two eggs and some milk to the bowl.
I stirred until no lumps remained.
I sprayed a 9 x 13 inch baking dish with cooking spray.
I dumped the ground beef mixture into the baking dish and spread it out evenly.
Then I poured the cornbread batter over the ground beef mixture and spread it out evenly.
I placed the baking dish in the oven and baked until the cornbread was nicely browned on top.
Then I removed the dish from the oven.
I sprinkled some shredded Mexican cheese blend on top of the cornbread.
I returned the dish to the oven and continued baking until the cheese was completely melted and just starting to brown.
I removed the casserole from the oven and allowed it to rest for a few minutes.
Then the casserole was ready to scoop and serve.

How to Make Chili Cornbread Casserole:
- Preheat oven to 400F.

- Add the salsa, chili seasoning, salt and pepper to the skillet and stir well.
- Add the mixed beans and corn to the skillet.
- Stir well and reduce the heat to medium-low.
- Leave the ground beef mixture to simmer while you prepare the cornbread batter.
- Dump the cornbread mix into a mixing bowl.
- Add the eggs and milk to the bowl.
- Stir until no lumps remain.
- Spray a 9 x 13 inch baking dish with cooking spray.
- Pour the ground beef mixture into the baking dish and spread it out evenly.
- Pour the cornbread batter over the ground beef and spread it out evenly.
- Place the baking dish in the oven and bake until the cornbread is nicely browned on top. 18 – 20 minutes.
- Remove the dish from the oven and sprinkle the shredded cheese on top.
- Return the casserole to the oven and continue baking until the cheese on top is completely melted and just starting to brown. 4 – 5 minutes.
- Remove the dish from the oven and leave the casserole to rest for a few minutes.
- Serve and enjoy!
