To make this casserole, I started by dumping some lean ground beef into a large nonstick skillet over medium-high heat.

I crumbled the ground beef well as it cooked.

Once the ground beef was fully cooked, I drained the grease from the pan.

Then I added some chunky salsa, chili seasoning, salt and pepper to the skillet.

I stirred until all of the ingredients were fully combined.

Then I added some canned mixed beans and frozen corn kernels to the skillet.

I stirred well and left the mixture to simmer over medium-low while I prepared the cornbread batter.

I dumped two boxes of Jiffy cornbread mix into a mixing bowl.

I added two eggs and some milk to the bowl.

I stirred until no lumps remained.

I sprayed a 9 x 13 inch baking dish with cooking spray.

I dumped the ground beef mixture into the baking dish and spread it out evenly.

Then I poured the cornbread batter over the ground beef mixture and spread it out evenly.

I placed the baking dish in the oven and baked until the cornbread was nicely browned on top.

Then I removed the dish from the oven.

I sprinkled some shredded Mexican cheese blend on top of the cornbread.

I returned the dish to the oven and continued baking until the cheese was completely melted and just starting to brown.

  • 17 oz Jiffy cornbread mix (2 boxes)
  • 2 eggs, large
  • 2/3 cup milk
  • 1 cup shredded Mexican cheese blend

  1. Preheat oven to 400F.
  2. Dump the ground beef into a large non stick skillet over medium-high heat.
  3. Crumble the ground beef well as it cooks.
  4. Once the ground beef is fully cooked, drain the grease from the pan.
  5. Add the salsa, chili seasoning, salt and pepper to the skillet and stir well.
  6. Add the mixed beans and corn to the skillet.
  7. Stir well and reduce the heat to medium-low.
  8. Leave the ground beef mixture to simmer while you prepare the cornbread batter.
  9. Dump the cornbread mix into a mixing bowl.
  10. Add the eggs and milk to the bowl.
  11. Stir until no lumps remain.
  12. Spray a 9 x 13 inch baking dish with cooking spray.
  13. Pour the ground beef mixture into the baking dish and spread it out evenly.
