Turkey Meatloaf Muffins are a tasty meatloaf recipe made with ground turkey and stuffing mix and baked in muffin tins.
These mini meatloaves are packed with flavour.
This meatloaf muffin recipe takes just over thirty minutes from start to finish and produces twelve meatloaf muffins.
To make these meatloaf muffins, I started by dumping some ketchup into a mixing bowl.
I added some yellow mustard and Worcestershire sauce to the bowl.
I stirred the ingredients together well and set the bowl aside.
I dumped some lean ground turkey into a large mixing bowl.
I added some Stove Top stuffing mix to the bowl.
I also added some eggs to the bowl.
Then I added ¼ cup of the prepared ketchup mixture to the bowl with the ground turkey.
I used my hands to combine all of the ingredients together well.
Then I sprayed a 12 cup muffin tin well with cooking spray.
I scooped the meat mixture into the muffin tin and pressed it in gently.
Then I spread the remaining ketchup mixture on top of the meatloaf muffins in the baking pan.
I placed the muffin tin in the oven and baked the meatloaf muffins for about twenty minutes.
Then I removed the muffin tin from the oven.
I left the meatloaf muffins to rest in the muffin tin for a few minutes.
Then I scooped the meatloaf muffins out of the tin.
I served my meatloaf muffins with mashed potatoes.
