To make this chicken pasta, I started by slicing some boneless, skinless chicken breasts into one inch chunks.
I dumped the chicken breast chunks into a bowl.
I added some Cajun seasoning to the bowl.
I stirred until all of the chicken breast chunks were coated in the seasoning.
I heated some oil in a large skillet over medium-high heat.
Once the oil was hot, I added the chicken to the skillet.
I stirred the chicken pieces around to let them cook on all sides.
I cooked the chicken pieces until they were nicely browned on all sides.
Then I added some minced shallot and garlic puree to the skillet.
I stirred well.
I added some frozen corn and Rotel diced tomatoes and green chilies to the skillet.
I stirred all of the ingredients together well.
Then I added some orzo pasta to the skillet.
I stirred again.
I added some chicken broth to the skillet.
I brought the liquid to a simmer.
Then I placed a lid on the skillet and reduced the heat to medium-low.
I left the dish to simmer, stirring occasionally, until all the liquid was absorbed.
Then I added some heavy cream to the skillet.
I stirred well and and continued cooking for a few minutes.
Then I removed the skillet from the heat and added some shredded cheddar cheese.
I stirred until the cheese was melted.
Then the orzo pasta with chicken was ready to serve.
