To make this chicken dish, I started by seasoning some chicken breasts with salt and pepper.

I heated some oil in an oven safe skillet over medium heat.

Once the oil was hot, I added the chicken to the skillet.

I cooked the chicken for 2-3 minutes on each side.

Then I added some minced garlic to the skillet and stirred.

After the garlic had cooked for about 20 seconds, I removed the skillet from the heat.

Then I added some balsamic vinaigrette to the skillet.

I topped the chicken with halved mozzarella balls, cherry tomatoes and fresh chopped basil.

I placed the skillet in the oven and baked until the chicken had reached an internal temperature of 170F.

Then I removed the skillet from the oven.

I drizzled some balsamic glaze on top.

Ingredients You’ll Need to Make This Caprese Chicken:

  • 1 pound chicken breast (4 small chicken breasts)
  • 1 teaspoon Kosher salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 large cloves garlic, minced
  • ¼ cup balsamic vinaigrette
  • ½ cup cherry tomatoes, halved
  • 4 mozzarella balls, halved or 4 slices fresh mozzarella
  • 2 tablespoons fresh basil, chopped
  • 2-3 tablespoon balsamic glaze

How to Make This Caprese Chicken:

  1. Preheat oven to 400 degrees.
  2. Season both sides of chicken with salt and pepper. 
  3. Add oil to medium sized, oven-safe, skillet on medium heat.
  4. Once oil is heated, add chicken and cook 2-3 minutes on each side.
  5. Stir in garlic and allow to cook for 20 seconds or until fragrant.
  6. Remove from heat, scrape any bits off bottom of pan, then add in balsamic vinaigrette and tomatoes.
  7. Top with cheese and sprinkle with basil. 
  8. Bake in oven 10-12 minutes or until internal temperature is 170.
  9. Remove from oven and drizzle with balsamic glaze. (Don’t omit this; it really adds to the dish)
  10. Serve and enjoy!

Notes

  • Fresh garlic is always best, but you can use jarred minced garlic.
  • I like the mozzarella balls; you can snack on the extras. If you prefer, use whole mozzarella and slice it. Use the leftovers for another recipe, such as lasagna.
  • Chicken is done when it reaches an internal temperature of 170. Cook time will vary depending on size/thickness of chicken.
  • I made my own balsamic glaze, but store bought works great too and it’s an easy shortcut.
  • Store leftovers in airtight container. Refrigerate up to 2 days. Reheat in microwave.
