Mexican Chicken Casserole is a simple and delicious chicken dinner recipe perfect for weeknights.
This casserole starts out with a base of cooked white rice topped with shredded chicken mixed with sour cream, taco seasoning, Rotel and shredded cheese and baked with more shredded cheese on top.
This chicken casserole recipe takes about forty-five minutes from start to finish and serves six people.

To make this casserole, I started by preparing some Minute rice according to the directions on the package.
Then I dumped some sour cream into a large mixing bowl.
I added a packet of taco seasoning to the bowl with the sour cream.
I stirred the sour cream and taco seasoning together well.
Then I added some shredded rotisserie chicken to the bowl.
I stirred until all of the chicken was coated in the sour cream and taco seasoning mixture.
Then I added a can of Rotel diced tomatoes and green chilies to the bowl along with some chopped green onions.
I stirred all of the ingredients together well.
Then I added some shredded Mexican cheese blend to the bowl.
I stirred well again.
I dumped the cooked rice into the bottom of a greased 9 x 13 inch baking dish and spread it out evenly.
Then I spooned the chicken mixture over the rice.
I sprinkled some more shredded cheese on top of the chicken mixture.
Then I placed the dish in the oven and baked the casserole until it was bubbling and the cheese was starting to brown around the edges.
I removed the dish from the oven and allowed the casserole to sit for a few minutes before scooping and serving.
This cheesy chicken and rice casserole is sure to please the whole family.
The taco seasoning and Rotel add a bit of a kick to the dish but it is not overly spicy.

- 1 1/2 cups sour cream

How to Make Mexican Chicken Casserole:
- Preheat oven to 400F.
- Prepare the rice according to the directions on the package.
- Dump the sour cream and taco seasoning into a large mixing bowl.
- Stir the sour cream and taco seasoning together well.
- Add the shredded chicken to the bowl and stir until all of the chicken is coated in the sour cream mixture.
- Add the Rotel and chopped green onions to the bowl and stir well.
- Add the shredded cheese to the bowl and stir well again.
- Dump the cooked rice into a greased 9 x 13 inch baking dish and spread it out evenly,
- Spoon the chicken mixture over the rice in the baking dish.
- Sprinkle the remaining cup of shredded cheese on top.
- Place the dish in the oven and bake until the casserole is bubbling and the cheese is starting to brown around the edges. 22-25 minutes.
- Remove the casserole from the oven and sprinkle the remaining green onions on top.
- Serve and enjoy!
