To make this sour cream and onion chicken, I started by dumping some sour cream into a large mixing bowl.
I added some onion powder, salt and pepper to the bowl.
I stirred all of the ingredients together well.
Then I added some chopped chives to the bowl.
I stirred well again.
I scooped approximately one third of the sour cream mixture into the bottom of a 9 x 13 inch baking dish.
I spread the sour cream mixture out to cover the bottom of the dish.
Then I placed four boneless, skinless chicken breasts in a single layer on top of the sour cream.
I poured the remaining sour cream mixture over the chicken breasts, making sure to cover them completely.
I placed the dish in the oven and baked the chicken breasts for forty minutes.
While the chicken breasts were in the oven, I poured some French’s fried onions into a large Ziploc bag.
Then I used a rolling pin to crush the fried onions.
Once the chicken breasts had baked for forty minutes, I removed the pan from the oven.
I poured the crushed fried onions on top of the chicken breasts.
Then I returned the pan to the oven for an additional five minutes just to brown the onions slightly.
I removed the pan from the oven and allowed the chicken to rest for a few minutes.
I sprinkled some chopped chives on top just before serving.
This sour cream and onion chicken is juicy and flavourful.
