Then I placed some boneless, skinless chicken breasts in a single layer in the pot.

I sprinkled some Italian seasoning, red pepper flakes, salt and pepper over the chicken breasts.

Spoon some of the sauce over the chicken breasts.

I placed the lid on the Crock Pot and cooked the chicken on HIGH for 3 hours, making sure the chicken breasts had reached an internal temperature of 165F.

  7. Turn the crockpot off and place the spinach leaves into the crock pot and place the cover back on for about 15 minutes or just until the spinach leaves have wilted.
