These quesadillas have a bit of a kick from the taco seasoning but are not overly spicy.
This chicken quesadilla recipe takes about thirty minutes from start to finish and serves four people.

To make these quesadillas, I started by dumping some shredded rotisserie chicken into a large mixing bowl.
Then I added some mayo to the bowl with shredded chicken.
I also added some mild taco seasoning.
I stirred well until all of the chicken was coated in mayo and taco seasoning.
Then I added some diced green peppers and diced red peppers to the bowl.
I stirred well again.
I added some shredded Mexican cheese blend to the bowl.
I used a fork to combine the cheese with the chicken mixture.
Then I lay eight 8″ tortillas on the counter.
I spread the chicken mixture on one half of each of the tortillas.
Then I sprayed a large baking sheet well with butter flavoured cooking spray.
I folded the tortillas in half over the chicken mixture and placed them on the baking sheet.
Then I sprayed the tops of the tortillas with the butter flavoured cooking spray.
I placed the baking sheet in the oven and baked the quesadillas until the tortillas were golden brown on the bottom.
Then I removed the baking sheet from the oven.
I flipped the quesadillas over.
Then I returned the baking sheet to the oven and continued baking the quesadillas until the other side was golden brown as well.
I removed the quesadillas from the oven when both sides were golden brown.
Then I cut them all in half.
I served the quesadillas with salsa and ranch dressing.

Ingredients You’ll Need to Make these Easy Baked Chicken Quesadillas:

How to Make Easy Baked Chicken Quesadillas:
- Preheat oven to 375F.
- Dump the shredded chicken, mayo and taco seasoning into a large mixing bowl.
- Stir until all of the chicken is coated in the mayo and taco seasoning.
- Add the diced green peppers and red onions to the bowl.
- Stir well again.
- Add the shredded cheese to the bowl.
- Use a fork to combine the shredded cheese with the chicken mixture.
- Lay the tortillas out on the counter.
- Spread the chicken mixture on one half of each of the tortillas.
- Fold the tortillas in half over the chicken mixture.
- Spray a large baking sheet well with the butter flavoured cooking spray.
- Place the quesadillas on the baking sheet.
- Spray the tops of the quesadillas with the butter flavoured cooking spray.
- Place the baking sheet in the oven and bake the quesadillas until the bottoms are golden brown. About 8 minutes.
- Remove the pan from the oven and flip the quesadillas.
- Return the pan to the oven and continue baking the quesadillas until the other side is golden brown as well. About 5 minutes.
- Remove the pan from the oven.
- Slice the quesadillas in half and serve.
