To make these chicken tacos, I started by dumping some lean ground chicken into a large saute pan over medium-high heat.
I added some diced yellow onion to the pan with the ground chicken while it was cooking.
I stirred the onions and ground chicken together.
I crumbled the ground chicken well as it cooked.
Once the ground chicken was fully cooked, I added some water and chicken taco seasoning to the pan.
I stirred until all of the ground chicken was coated in the taco seasoning.
I also added some ketchup to the pan.
I stirred the ketchup into the ground chicken mixture well.
Then I left the dish to simmer until almost no liquid remained in the pan.
Then I added some drained Rotel diced tomatoes and green chilies to the pan.
I stirred well and then reduced the heat to low.
I added some shredded Mexican cheese blend to the pan.
I stirred until the cheese was melted.
I left the pan over low heat to stay warm while I prepared the taco shells.
You can warm your tortillas according to the instructions on the package or even use hard shells if you prefer.
I placed my tortillas in stainless steel taco stands on a baking sheet.
Then I placed the baking sheet in the oven to warm them.
Once the taco shells were lightly toasted, I removed the baking sheet from the oven.
Then I spooned the ground chicken mixture into the taco shells.
I drizzled ranch dressing and avocado dressing on top of the ground chicken mixture in the taco shells.
These ground chicken tacos are packed with flavour.
