To make these sloppy joes, I started by dumping some ground chicken into a large saute pan over medium-high heat.
I crumbled the ground chicken well as it cooked.
I added some diced onions to the pan with the ground chicken while it was cooking.
I stirred the onions and ground chicken together well.
Once the ground chicken was fully cooked, I added some marinara sauce, basil pesto, salt and pepper to the pan.
I stirred until all of the ground chicken was coated in sauce.
Then I reduced the heat to low and added some shredded Parmesan cheese to the pan.
I stirred until the Parmesan cheese was melted and then left the mixture to continue cooking over low heat while I prepared the buns.
I placed some brioche buns in a single layer on a baking sheet.
I spread the buns with garlic margarine.
Then I placed the baking sheet in the oven and toasted the buns for five minutes.
After five minutes I removed the toasted garlic buns from the oven.
I spoon the chicken sloppy joe mixture onto the bottom buns.
I sprinkled some shredded mozzarella cheese on top of the chicken mixture.
I placed the top buns over the cheese.
Then the chicken sloppy joes were ready to serve.

- Stir well again and leave the mixture to continue cooking over low heat while you prepare the buns.
- Lay the brioche buns in a single layer on a baking sheet.
- Spread the garlic margarine on the buns.
- Place the baking sheet in the oven and toast the buns for 5 minutes.
- Once the buns are toasted, spoon the sloppy joe mixture onto the bottom buns.
- Sprinkle the shredded mozzarella cheese on top of the sloppy joe mixture and then cover with the top buns.
