To make this dinner recipe, I started by dicing some sweet bell peppers into large chunks.

I also diced some yellow onion.

Then I set my Instant Pot to Saute.

I added some olive oil to the pot as it was heating.

Once the pot was hot, I used a fork to poke some holes in some mild Italian sausages and then placed them in a single layer in the bottom of the pot.

I cooked the sausages until the bottoms were browned.

Then I turned the sausages over to brown the other sides.

Once the sausages were browned on both sides, I removed them from the pot and set them aside on a plate.

I added the diced onions and bell peppers to the pot.

I stirred well and then cooked the onions and peppers for a few minutes.

After a few minutes, I turned of the Instant Pot and poured in some chicken broth.

I stirred well and scraped the bottom of the pot to make sure nothing was sticking to the bottom.

Then I added some marinara sauce to the pot.

I also added some Thai sweet chili sauce to the pot.

I placed the sausages on top.

Then I placed the lid on the Instant Pot, turned the steam release handle to the sealing position and set the Instant Pot to pressure cook on High for 6 minutes.

Once the Instant Pot was done cooking, I left it to natural release for 12 minutes.

After 12 minutes of natural release, I turned the steam release handle to the venting position to release the remaining pressure.

I removed the sausages from the pot and set them on a cutting board.

I stirred the contents of the pot well.

 

Then I set the Instant Pot to saute.

I dissolved some cornstarch in water.

Once the liquid in the pot started to simmer, I added the cornstarch mixture to the pot.

I stirred well and left the liquid to continue simmering and thickening.

I sliced the cooked sausages on the cutting board.

Once the liquid in the pot was nicely thickened, I turned off the Instant Pot.

I added the sausage slices to the pot and stirred well.

I left the mixture to sit for 5 minutes before serving.

Ingredients You’ll Need to Make This Instant Pot Sausage and Peppers:

  • 2 tsp olive oil
  • 1 lb Italian sausages

  12. Place the browned sausages on top.
  13. Place the lid on the Instant Pot, turn the steam release handle to the sealing position and set the Instant Pot to pressure cook on HIGH for 6 minutes.
  14. When the Instant Pot is done cooking, leave it to natural release for 12 minutes.
  15. After 12 minutes, turn the steam release handle to the venting position to release the remaining pressure.

  17. Stir the contents of the pot well and set the Instant Pot to saute.
  18. In a small bowl dissolve the cornstarch in the water.
  19. Once the liquid in the pot is simmering, add the cornstarch mixture to the pot.
  20. Stir well and leave the mixture to simmer until the sauce is nicely thickened.
  21. Slice the sausages.
  22. Turn off the Instant Pot and add the sausages to the pot.
  23. Stir well and leave to sit for 5 minutes.
